If there’s one thing I make over and over again on my griddle, it’s Blackstone potatoes. They’re simple, budget-friendly, and somehow always the first thing to disappear. There’s just something about cooking potatoes on the Blackstone that gives you those crispy edges and tender centers that you just can’t get the same way in a pan.

One of the biggest reasons I love making potatoes on the Blackstone is how easy it is to cook for a group. I can spread them out, let them get nice and crispy, and still have room to cook the rest of the meal right alongside them.

Plus, there’s so much flexibility. I can keep things simple with just oil, salt, and pepper, or dress them up with cheese, bacon, garlic, or whatever I have on hand. That’s the beauty of griddle potato recipes—they’re as simple or as loaded as you want them to be.

What to Serve with Griddle Potatoes

In my kitchen, Blackstone potatoes go with just about everything. For breakfast, I love serving them with fried eggs, bacon, or griddle sausage patties. They’re also perfect alongside griddle pancakes or breakfast sandwiches.

For lunch or dinner, I usually pair them with smash burgers, griddle garlic butter chicken, or butter steak. If I’m making hibachi on the griddle, I’ll often throw on some potatoes as a side instead of rice for something a little different. Honestly, if I’m cooking outside, there’s a good chance potatoes on the Blackstone are part of the meal.

What are the best potatoes to use on a Blackstone griddle?

I tend to use russet potatoes when I want crispy fries or hash browns, and Yukon Gold potatoes when I’m making fried potatoes or smashed potatoes. Both work great—it just depends on the texture you’re going for.

Do you need to boil potatoes before cooking them on the griddle?

Not always. For recipes like smashed potatoes, I do like to parboil them first so they’re soft inside. But for fried potatoes or diced potatoes, you can cook them straight on the griddle.

How do you get crispy potatoes on the Blackstone?

Make sure your griddle is hot. Don’t overcrowd the surface and arrange the potatoes in a single layer on the griddle.  Let the potatoes sit without flipping too often. That’s how you get those golden, crispy edges.

Can you cook frozen potatoes on the Blackstone?

Yes, and I do it all the time. Frozen fries, tater tots, and hash browns are super convenient and cook up perfectly on the griddle.

What oil should I use for griddle potato recipes?

I like to use oils with a high smoke point like canola oil or avocado oil. They help the potatoes crisp up without burning.
