I love making this recipe on my Blackstone because the large cooking surface gives the potatoes plenty of room to crisp up without steaming. The combination of golden potatoes, tender onions, and sweet peppers makes this one of my favorite griddle potato recipes to cook outdoors.

What are O’Brien Potatoes?

Potatoes O’Brien are diced potatoes cooked with onions and bell peppers. Traditionally, the dish uses red and green peppers, but I love using red and orange peppers because they add beautiful color and a slightly sweeter flavor.

The potatoes are cooked until crispy on the outside while staying soft and fluffy inside. This classic potato side dish is commonly served alongside fried eggs, bacon, sausage, griddle steak, or smash burgers.

Why Do They Call it Potatoes O’Brien?

The exact origin of potatoes o’brien is somewhat debated, but many believe the dish originated at a restaurant in the early 1900s. The recipe became popular because it was a simple and flavorful way to serve potatoes with vegetables.

Over time, the dish became a breakfast diner favorite and is now commonly found on restaurant menus and homemade breakfast tables across the country.

What’s the Difference Between Hash Browns and Potatoes O’Brien?

Although both dishes are potato-based breakfast favorites, they are prepared differently. You can check out my griddle hash brown recipe.

Hash browns are typically made using shredded potatoes that cook into a crispy potato cake. Potatoes O’Brien use diced potatoes mixed with onions and peppers for a chunkier texture and more colorful presentation.

I personally love how versatile this obrian potato recipe is because it can easily be served as a breakfast side or paired with dinner recipes right off the griddle.

Cooking Diced Potatoes on Blackstone Griddle

Cooking diced potatoes on the Blackstone Griddle gives you incredible texture and flavor. The flat top allows the potatoes to develop a crispy crust while cooking evenly throughout.

The key is giving the potatoes enough time to brown before stirring too often. Once the potatoes start getting golden and crispy, add the peppers and onions.  Blend everything together perfectly to get nice and golden brown.

One of my favorite things about making Blackstone Potatoes O’Brien is how easy they are to customize. You can add garlic, smoked paprika, Cajun seasoning, shredded cheese, or even cooked bacon for extra flavor.

What to Serve with Potatoes O’Brien

These potatoes pair perfectly with fried eggs, breakfast foods, burgers, grilled chicken, steak, or just about anything coming off the griddle.

How to Make Potatoes O’Brien on a Blackstone Griddle

These Blackstone Potatoes O’Brien are loaded with crispy diced potatoes, colorful peppers, onions, and savory seasonings. Cooked on the griddle until golden brown and tender, this easy potato side dish is perfect for breakfast, lunch, or dinner.

Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • Potatoes, Russets, diced 3 cups
  • Red Bell Pepper, diced 1/2 cup
  • Orange Bell Pepper, diced 1/2 cup
  • Onion, diced 1/2 cup
  • Oil, Avocado 2 tablespoons
  • Salt 1 teaspoon
  • Black Pepper, ground 1/2 teaspoon

Instructions

    1. Preheat the Griddle:  Preheat the Blackstone Griddle to medium heat.
    2. Add the Oil and Potatoes:  Spread the oil onto the griddle surface. Add the diced potatoes in a single layer.
    3. Season the Potatoes:  Sprinkle the potatoes with salt and pepper or use your favorite seasoning blend.
    4. Cook Until Crispy:  Allow the potatoes to cook for several minutes before flipping. Continue cooking and turning occasionally until the potatoes become golden brown and crispy.
    5. Add the Peppers and Onions:  Add the diced red peppers, orange peppers, and onions to the griddle with the potatoes.
    6. Continue Cooking:  Cook until the peppers and onions soften, and the potatoes are fully tender.
    7. Serve Hot:  Remove from the griddle and serve
      immediately with breakfast favorites, burgers, steak, or grilled meats.

Notes

Tips

  • Let the potatoes cook on the griddle until crispy before flipping them.
  • If you don't have a flat top griddle, this recipe can be cooked in a pan on the stove over medium heat.
  • Add your favorite ingredients to create different flavors.
