Street corn dip is a creamy appetizer inspired by Mexican street corn (Elote). It combines roasted corn, creamy ingredients, cheese, and seasonings into a delicious scoopable dip.
Corn Dip Ingredients
- Corn on the Cob
- Jalapeño, diced
- Sour Cream
- Mayonnaise
- Salt
- Black Pepper
- Garlic Powder
- Paprika
- Shredded Colby Jack cheese
- Cotija cheese
Optional Add-Ins
- Crumbled bacon
- Diced red peppers
- Chopped cilantro
- Fresh lime juice
- Hot sauce

How to Make Street Corn Dip
Learning how to make street corn dip is surprisingly simple. I start by roasting whole ears of corn on my Blackstone Griddle. You can check out my full step by step post at Griddle Fried Corn. The roasting process develops a rich, sweet flavor while creating a little caramelization that makes the corn even more delicious.
One of my favorite tricks is removing the husks after cooking. Simply cut off the bottom end of the corn cob and slide the husk and silk right off the cob. It’s a quick and easy way to clean roasted corn without making a mess.
After removing the kernels from the cob, return them to the griddle for a few more minutes. This extra roasting step adds even more flavor and gives the corn a beautiful golden color.
Add the roasted corn to a large bowl, stir in the sour cream, mayonnaise, jalapeño, seasonings, Colby Jack cheese, and Cotija cheese. Mix everything together until creamy and well combined.
Serve immediately while warm with your favorite tortilla chips, pita chips, crackers, or fresh vegetables.
Can I Use Canned, Frozen, or Leftover Corn?
Absolutely! Fresh corn provides the best flavor, but this street corn dip recipe can easily be made year-round.
Frozen corn works great. Simply thaw and drain before roasting on the griddle.
Canned corn is another convenient option. Drain well and cook on the griddle until lightly browned.
Leftover corn on the cob is perfect for this recipe. Simply cut the kernels off the cob and warm them on the griddle before preparing the dip.
What to Serve with Corn Dip Recipe
This Mexican street corn dip pairs perfectly with a variety of dippers and meals. Serve it with tortilla chips, pita chips, crackers, toasted smoked crostini slices, pretzel crisps, or fresh vegetables. It also makes a delicious topping for tacos, nachos, wet burrito, griddle chicken, and smashed burgers.

Ingredients
- Corn on the Cob 4 ears
- Jalapeño, diced 1 each
- Sour Cream 1 cup
- Mayonnaise 1/2 cup
- Salt 1/4 teaspoon
- Black Pepper 1/4 teaspoon
- Garlic Powder 1/4 teaspoon
- Paprika 1/4 teaspoon
- Shredded Colby Jack Cheese 1/4 cup
- Cotija Cheese 1/4 cup
Instructions
- Roast the Corn
Wrap the ears of corn in foil and place them on a preheated Blackstone Griddle over medium heat. Cook for 20-30 minutes, turning occasionally until tender. - Remove the Husks
Carefully remove the foil. Cut off the bottom end of each cob and slide the husk and silk off the corn. - Cut Off the Kernels
Stand each ear upright and carefully cut the kernels from the cob. - Roast the Kernels
Return the corn kernels to the griddle and cook for 3-5 minutes, stirring occasionally, until lightly browned. - Add the Ingredients
Add the diced jalapeño, sour cream, mayonnaise, salt, pepper, garlic powder, paprika, Colby Jack cheese, and Cotija cheese to the warm corn. - Stir to Combine
Mix everything together until the ingredients are evenly distributed and the cheese begins to melt. - Serve Warm
Transfer the dip to a serving bowl and serve immediately with tortilla chips, pita chips, crackers, or fresh vegetables.
