Blackstone Wet Burrito

If you have never had a Blackstone Wet Burrito, then you have to give this burrito recipe a try!!   With as little as 5 ingredients and a couple minutes, you will have a hot and delicious meal that your whole family will love. 

Wet burritos are seasoned ground beef wrapped into soft tortilla shells topped with enchilada sauce and loads of melting cheese.

What is the Difference Between a Burrito and a Wet Burrito?

A burrito is a soft-shell tortilla wrapped and stuffed with your favorite fillings and is eaten with your hand.  

However, a wet burrito is a soft-shell tortilla wrapped with your favorite filling, topped with an enchilada sauce and a large coating of shredded cheese that is melted to perfection and eaten with a fork

The wet burrito sauce I use is known as Red Enchilada Sauce. This red sauce comes in mild, medium, and hot spiciness.

My preferred enchilada sauce is the Old El Paso brand in the mild flavor.  

How to Make a Blackstone Wet Burritos?

Gather everything you need for your Blackstone wet burritos. Preheat the Blackstone Griddle to medium heat. 

Once the griddle is hot, place your ground burger along with the diced white onions onto a lightly greased surface.

Season with your favorite seasonings.  I like to use Lawry’s seasoned salt and Morton’s Nature Seasonings

Brown the hamburger on medium heat until done making sure to chop the meat into small pieces with the griddle spatula as it cooks.

Remove any excess fat from the burger and push into the grease trap.  Once the burger is fully cooked, prepare the burritos. 

How to Fold a Wet Burrito

Learning to roll a wet burrito might take some practice. Lay a large soft tortilla shell onto the Blackstone Griddle. 

Measure some of the cooked burger onto the middle of the tortillas.

Prepare the wet burrito by folding over one side of the soft tortilla shell toward the center over top the burger filling with one hand.

Then fold over the opposite side of the tortillas toward the center covering the top of the shell that you previously folded with the other hand.  Make sure to leave one hand on top of the tortilla shell to hold in place.

Then with the other hand, fold in the third side and hold to secure.  Finally, fold in the fourth side and quickly roll over to create your burrito pouch.

How to Assemble a Beef Wet Burrito

Assembly the wet burrito on the hot Blackstone Griddle, on a serving plate, or a pan. 

Top the burrito with your desired amount of red enchilada sauce.  I like about ½ cup to ¾ cup of sauce.

Then sprinkle the sauce covered burrito with shredded cheese such as Colby jack or Mexican cheese blend.  Cover with a dome lid and allow the cheese to melt.

Finally, top the whole wet burrito with your favorite toppings such as shredded lettuce and a dollop of sour cream.

Eat your burrito with an assortment of different topping to customize your own wet burrito.

  • Shredded Lettuce
  • Diced Tomatoes
  • Olives – Black olives or  green olives
  • Diced Onions – White onion or sweet onion
  • A Dollop of Sour Cream
  • Guacamole
  • Green Pepper
  • Salsa

Blackstone Burrito Variations

  1. Instead of an all-beef burrito, try one of these variations.
  2. Along with the ground beef, combine some refried beans for the filling.
  3. Use all refried beans for a healthier version.
  4. Instead of ground beef, use ground turkey or chicken.
  5. Shredded seasoned chicken
  6. Shredded Pork – Regular or Smoked
  7. Add taco seasonings to the browned burger for a flavorful filling.

How to Store Wet Burritos

It is best to eat wet burritos while they are still hot. Because of the large size of a wet burrito, you will more than likely have extras that you want to keep for later. 

To store a leftover wet burrito, remove as much of the perishable toppings such as the fresh vegetables and sour cream.  Place in an airtight container and store in the refrigerator for up to 3 days. 

I recommend eating any leftovers by the next day. Reheat in the microwave and add extra sauce and shredded cheese if desired. 

I do not recommend freezing a wet burrito.  They will become soggy and not taste very well. 

Stove-Top Wet Burrito Recipe

If you don’t have a Blackstone Griddle, that’s ok! Make your wet burritos on the stove.

Prepare your ground burger in a saucepan on the stove. Drain the meat and prepare the wet burritos as described above.

Melt the shredded cheese on top of the wet burrito in the microwave or the broiler in your oven.

Ingredients

  • Ground Beef 1/2 pound
  • Onion, White, Diced 1/2 cup
  • Salt, Seasoned 1/4 teaspoon
  • Pepper, Seasoned 1/4 teaspoon
  • Tortillas, Soft Taco Shells 2 each
  • Enchilada Sauce, Red 5 ounces
  • Cheese, Shredded, Colby Jack 2 cups

Instructions

  1. Gather everything you need for your Blackstone Griddle wet burritos. Preheat the Blackstone to medium heat.  Once the Blackstone griddle is hot, place your ground beef along with the diced white onions onto a lightly greased surface.  Season with your favorite seasonings, like Lawry’s seasoned salt and Morton’s Nature Seasonings.  Brown the burger mixture on medium heat until done making sure to chop the meat into small pieces with the griddle spatula as it cooks. Remove any fat from the burger and push into the grease trap.  Once the hamburger is fully cooked, prepare the burritos. 

How to Fold a Blackstone Wet Burrito

  1. Learning to fold a wet burrito might take some practice. Lay a large soft tortilla shell onto the Blackstone Flat Top Griddle.  Measure some of the cooked hamburger onto the middle of the tortillas.  Prepare the wet burrito by folding over one side of the soft tortilla shell toward the center over top the burger filling with one hand.  Then fold over the opposite side of the tortillas toward the center covering the top of the shell that you previously folded with the other hand.  Make sure to leave one hand on top of the soft tortilla shell to hold in place.  Then with the other hand, fold in the third side and hold with your hand to secure.  Fold in the fourth side and quickly roll over to create your burrito pouch. 

How to Assemble a Beef Wet Burrito

  1. After the burrito pouch has been prepared, it’s time to add the finishing touches.  The assembly of your wet burrito can be done on the preheated Blackstone Griddle, on a serving plate, or a pan.  Pour the desired amount of red enchilada sauce over the top of the burrito pouch..  I like about ½ cup to ¾ cup of sauce.  Then sprinkle the sauce covered burrito with shredded cheese such as Colby jack or Mexican cheese blend.  Cover with a dome lid and allow the cheese to melt.  Finally, top the whole hibachi burrito with your favorite toppings such as shredded lettuce and a dollop of sour cream.

What is a Wet Burrito
A wet burrito is a wrapped beef burrito of ground beef folded in a soft tortilla shell that is smothered in red enchilada sauce, and then topped with shredded cheese. The cheese is then melted and finished off with your favorite toppings.

What is the Difference Between a Wet Burrito and an Enchilada?
There are two differences between a wet burrito and an enchilada. The first difference is the rolling technique of the soft tortilla shell. An enchilada shell is folded in the center but not the ends. A wet burrito is folded in the center as well as the ends. The second difference is that the enchilada is baked after the sauce and cheese is added over-top the soft shell. Whereas the wet burrito is warmed or broiled to melt the cheese.
