Do You Cook the Rice Before You Fry It?
Yes, when making griddle fried rice, you will want to use cooked rice for the recipe. Make sure not to overcook your white rice because the fried rice will become mushy. This white rice should be cooked al dente.
What Rice Do You Use for Fried Rice?
Long grain white rice works best for fried rice on the Blackstone Griddle. Some griddle owners say that the rice needs to be cooked ahead of time and to use only cold rice.
Others say that it is okay to use freshly cooked rice to make your fried rice. I have done it both ways and my fried rice – Blackstone style, turns out perfect every time.
Cooking the perfect rice is so controversial that I hate to even write this. But here is my secret to making the perfect fried rice recipe!!
THIS IS NOT THE TYPICAL WAY OF COOKING RICE! I apologize to all my Great Lakes Culinary Institute instructors because this is not how they taught me how to cook rice!!
I am old school, and this is how I was taught how to cook rice from my mother (30 YEARS AGO). After learning how to cook rice both ways, I prefer the boil and drain method for making fried rice.
The way that I cook rice is kind of like boiling potatoes for mashed potatoes.
How to Cook Perfect Rice for Fried Rice
Start with using white enriched long grain rice. Bring 10 cups or more of water to a boil in a large pot over medium heat.
This recipe calls for you to boil the rice until done and not to boil the water off the rice and have fully cooked rice. Add 1 ½ teaspoon of salt to the boiling water along with 1 1/3 cups of white enriched long grain rice.
This will make 4 cups of cooked rice. Stir to combine. Carefully watch the boiling water to make sure that it does not overboil.
Stir often to prevent sticking and clumping of the rice. You want the rice to be al dente so test for doneness.
Cooking times will vary, so test the rice after about 8-10 minutes of boiling. Once the rice is cooked then use a colander and strain the water off the rice.
Rinse with cold water and toss the rice around the colander to wash off all the starchiness of the cooked rice. Yes, I said rinse off the cooked rice!
This will not be “sticky rice” which is not what I want!! I use this white rice right away or store in an airtight container in the refrigerator until ready to make fried rice.
How To Make Blackstone Fried Rice
You want to make sure to dice all your vegetables and the bacon so that this fried rice recipe will cook up very quickly. Feel free to swap out the veggies for ones that are your favorite.

How to Cook Fried Rice
Add the diced bacon to the flat top griddle and cook until the bacon starts to crisp up. Next, add all the vegetables on-top of the crispy bacon.
Use the bacon grease to help cook the fresh vegetables. When the vegetables are almost tender crisp, pick another spot on the griddle to scramble an egg.
Make sure to lightly grease the griddle and cook the egg by itself until just done. On the Blackstone flat top griddle mix the bacon, vegetables, scrambled egg, rice, salt, and pepper all together.
Sauté for a few minutes and continue to combine ingredients. Sprinkle about a tablespoon of soy sauce on top of the griddle fried rice mixture.
Continue to cook until desired doneness is achieved. Test the Blackstone Griddle fried rice for flavor. Add more soy sauce, salt, and pepper if needed.
When desired flavor is achieved, remove from the flat top griddle to a serving dish. Serve the Blackstone griddle fried rice hot with your favorite main dish.

Can I Make Fried Rice on the Stovetop?
Yes, the steps are pretty much the same except you will use a large non-stick pan on the stove over medium heat instead of the Blackstone Griddle.
I like to cook the bacon and then drain most of the bacon grease before going on to the next step. Make sure to have all the ingredients prepped and ready to just toss into the fried rice recipe.
