How do you Cook Potatoes on a Flat Top Grill?

A couple of tips for cooking potatoes on a flat top grill are making sure to use small baby potatoes or very, very small potatoes.  Golf ball sized or smaller potatoes work best.  

You do not want to use average sized potatoes or even cut up potatoes.  

Boil your whole baby potatoes, drying them and cooling slightly are also more great tips.  

Use the back of your griddle spatula to “smash” your potatoes.

Gather your ingredients to make your crispy smashed potatoes.

With a little common sense and knowledge, cooking potatoes on a Blackstone Griddle are so easy to do.  I recommend boiling your potatoes, first.  

Do this by cooking them in a large pot of boiling water on the stove.  Add the salt to the water. Another option is to do this on your flat-top griddle using a stock pot with water and boiling the potatoes.  I prefer the stove top method.

Once the little potatoes are just fork tender but not falling apart, drain the water off and return to the stove.  On low heat, cook off all the remaining water from the potatoes.  If you don’t do this step, your potatoes will not turn out crispy.

Boiling the potatoes can be done ahead of time and placed into the refrigerator until ready to use.  Just take out ahead of time and let the potatoes come to room temperature.  

How to Make Smashed Potatoes

Preheat the Blackstone griddle to medium heat.  Once hot, add 2 tablespoons of the extra virgin olive oil along with 2 tablespoons of the butter to the flat top griddle and spread around.

Just remember, the best flavor comes from your palate. What I like, you might not like. Use the seasonings that you have in your house and what you are used to!!

You want to combine the melted butter and olive oil together. Arrange potatoes on the top of the grease, making sure to give the potatoes some room to cook.

Smashed Potatoes on Griddle

Gently smash the baby potatoes with the back of the griddle spatula or something heavy.  Let the smashed potatoes cook until golden brown.

You want a crispy on the outside and tender on the inside potato. Flip the smashed potato over to brown the other side.  

Add the rest of the olive oil and butter when needed.  Once these best smashed potatoes are fully cooked, flavor with some Simply Three seasoning from Northern Spice Co. in Manistee, Michigan. Toss to completely coat.

Can you boil potatoes on a griddle?

Yes, you can boil potatoes on a griddle.  Heat the Blackstone griddle to medium/high.  Use a shallow, griddle proof pan.  Try to arrange the potatoes on a single layer and cover the just enough water to reach the top of the largest potato.  Boil for 30 minutes until tender. Drain and steam off any excess water. Follow the “How to Make Smashed Potatoes” instructions.

Why Won’t my Potatoes Get Crispy?

If your potatoes are not getting crispy, then try turning the heat up to medium/high heat.  The wind might be affecting the temperature of the flat top.  Move the griddle to a less windy area or use wind guards if possible.  A trick to getting your smashed potatoes crispy is giving them time to cook.  Don’t constantly move them around or check them.  Smash them and let cook for several minutes until they get crispy.  Then flip your potatoes. Do not use a dome lid when cooking your smashed potatoes!!  The dome lid will create moisture inside the dome which will prevent the potatoes from crisping up.

Smashed potatoes and mashed potatoes are two completely different dishes.  Both start out with a basic potato but how they are prepared will create a completely different result.  This crispy smashed potato recipe is boiled baby potatoes that are crushed on a flat top griddle with butter, oil and seasoning and then cooked until crispy.  Mashed potatoes are boiled potatoes (peeled and unpeeled) that are mashed with an electric mixer or by hand.  Milk and butter are added to achieve the right texture.

Total Time 50 minutes

Ingredients

  • Potatoes, Baby 1 1/2 pounds
  • Salt 1 teaspoon
  • Olive Oil 4 tablespoons
  • Butter 4 tablespoons
  • Simply Three Seasoning. 1 teaspoon

Instructions

  1. Boil the potatoes (add salt to the water) in a pan over medium heat for 30 minutes. Drain the water from the pan and return to the stove. Cook off all the remaining water from the potatoes.
  2. Preheat the Blackstone Griddle to medium/high heat.
  3. Add 2 tablespoon each of the olive oil and the butter to the flat top griddle. With a spatula, spread around to combine. Arrange the potatoes on th griddle top. Smash each potato with the bottom side of the griddle spatula. Let the potatoes cook until crispy. Flip each potato. Add the rest of the oil and butter around the smashed potatoes. Cook until crispy.
  4. When the potatoes are fully cooked, season with your favorite seasoning or with Simple Three from Northern Spice Co. Toss to combine all ingredients. Serve hot.

Notes

Top fully cooked smashed potatoes with your favorite toppings such as shredded cheese, chopped bacon, or anything else you would like to add.

Smashed potatoes can be made in a saute pan on the stove instead of a Blackstone Griddle.

Do not use a dome lid when cooking smashed potatoes.

Store leftover potatoes in an airtight container in the fridge for up to 6 days.
