BEST Fried Corn

This Fried Corn recipe is one of those simple side dishes that my family never gets tired of eating. When fresh sweet corn is in season here in Michigan, I find myself making it again and again because it’s easy to prepare and always disappears quickly from the dinner table. Sometimes the simplest recipes are the most memorable, and this fried corn is proof of that.

What makes this recipe special is the incredible flavor that comes from cooking it on the Blackstone Griddle. The hot griddle helps caramelize the natural sugars in the corn, creating a slightly roasted flavor that takes ordinary corn to the next level. A little butter, salt, and pepper are all that’s needed to let the sweet corn shine.

How to Cook Griddle Corn on the Cob

Learning how to make fried corn on a Blackstone Griddle is surprisingly easy. Check out my more indepth post on Blackstone Griddle Corn on the Cob in Foil for different ways to griddle your corn. Start by leaving the corn in the husks and wrapping each ear in aluminum foil.

Preheat your Blackstone Griddle to medium heat. Place the foil-wrapped corn directly on the griddle and cook for about 20 to 30 minutes, turning occasionally until the corn is tender.

Carefully remove the corn from the foil and allow it to cool slightly. Using a sharp knife, cut off the bottom end of each cob. Grip the top of the husk and pull downward. The husk and silk should slide off easily, leaving clean corn behind.

How to Make Fried Corn

Stand each ear of corn upright on a cutting board and carefully cut the kernels from the cob. Return the corn kernels to the hot griddle.

Spread them out in an even layer and allow them to cook for several minutes. Stir occasionally while the kernels develop a light golden color and slightly roasted flavor.

Add the butter, salt, and pepper. Toss everything together until the butter melts and coats the corn evenly.

Serve immediately while hot. One of the things I love most about this griddle fried corn recipe is how versatile it is. You can keep it simple or turn it into something completely different by adding bacon, peppers, onions, or your favorite seasonings.

Can I Use Frozen, Canned, or Leftover Corn?

Absolutely! Frozen corn works wonderfully when fresh corn isn’t in season. Simply thaw and drain before cooking.

Canned corn can also be used. Drain the corn well before placing it on the griddle so it can develop some color and caramelization.

Leftover corn on the cob is another great option. Simply cut the kernels from the cob and roast them on the griddle with butter and seasonings.

What to Serve with Fried Corn

This fried corn recipe pairs perfectly with many summer favorites. Serve it alongside a smashed burger tower, griddle chicken, smoked ribs, pulled pork in the smoker, butter steak, Blackstone shrimp, fried walleye fish, or barbecue sandwiches. It’s also delicious with baked beans, potato salad, macaroni salad, or fresh garden vegetables.

Because it’s quick, easy, and full of flavor, fried corn makes an excellent side dish for everything from weeknight dinners to backyard cookouts.

Whole ears of corn wrapped in foil typically take 20 to 30 minutes. Once the kernels are removed from the cob, they only need about 5 to 8 additional minutes on the griddle.

Yes. Fried corn can be prepared ahead of time and reheated on the griddle or stovetop before serving.

What seasonings go well with fried corn?

Salt, pepper, garlic powder, onion powder, Cajun seasoning, chili powder, smoked paprika, and fresh herbs all pair well with fried corn.

This easy Griddle Fried Corn Recipe uses fresh sweet corn roasted on the Blackstone Griddle, then finished with butter, salt, and pepper. A simple summer side dish that's packed with flavor and perfect for cookouts and family dinners.

Ingredients

  • Fresh Sweet Corn 3 ears
  • Butter 2 tablespoons
  • Salt 1 teaspoon
  • Black Pepper 1/2 teaspoon

Instructions

    1. Wrap the Corn
      Leave the corn in the husks and wrap each ear in aluminum foil.
    2. Preheat the Griddle
      Preheat the Blackstone Griddle to medium heat.
    3. Roast the Corn
      Place the foil-wrapped corn on the griddle. Cook for 20 to 30 minutes, turning occasionally, until tender.
    4. Remove the Husks
      Carefully remove the foil. Cut off the bottom end of each cob and slide the husk and silk off the corn.
    5. Cut Off the Kernels
      Stand each ear upright on a cutting board and carefully slice the kernels from the cob.
    6. Roast the Corn Kernels
      Return the kernels to the hot griddle. Cook for 5 to 8 minutes, stirring occasionally, until lightly roasted.
    7. Add Butter and Seasonings
      Add the butter, salt, and pepper. Toss until the butter melts and coats the corn evenly.
    8. Serve
      Transfer to a serving dish and serve immediately.
