How to Make Grilled Chicken Kabobs
Gather your ingredients to make the grilled chicken kabobs with bacon.
Cut the chicken breast into one-inch cubes trying to keep them as uniform as possible. Slice the bacon pieces in one-inch pieces and refrigerate until ready to make the chicken kabob recipe.
Chicken Kabob Marinade
In a medium bowl, add the chicken pieces and sprinkle the ranch seasoning packet on top of the chicken. Drizzle the olive oil over the chicken/ranch mixture and stir to combine all the ingredients.
Cover the bowl and refrigerate for 1 to 8 hours. When ready to make the kabobs, remove the marinated chicken and the bacon pieces from the refrigerator.
Gather your skewer sticks. If using wooden skewers, make sure to soak in water before using. I like to use metal skewers.
Take a skewer and start with a piece of bacon. Poke the skewer in the center of the bacon piece, being careful to not poke your hand, and slide it all the way to the other end.
Next, add a piece of the marinated chicken cube through the center and slide it to touch the bacon piece. Repeat this process several more times until your skewer is full. I was able to get two kabobs per chicken breast.
How to Grill Chicken Kabobs
Preheat your Blackstone Griddle/Grill on the low setting. Cook the kabobs, low and slow so that you do not burn the bacon before the chicken gets done.
Place a thin layer of your desired oil onto the griddle grill. Carefully, set the kabobs onto the hot surface.
Let cook until the first side is golden brown. With a pair of tongs, flip the kabob to the opposite side.
Continue cooking until that side is golden brown. Flip again to a non-grilled side and continue cooking until all four sides are golden brown in color and the chicken is completely cooked.
How Long to Grill Chicken Kabobs
Griddle grilled chicken kabobs cooked on the low setting will take about 20-25 minutes. Make sure to test one of the middle pieces of chicken on the skewer for doneness. The kabob should be a golden-brown color, not burnt black.

These kabob’s where so easy and Delicious. My family really loved them. I added onion and peppers and it only made a good thing better.
The flavor was great. I ended up pulling the chicken and bacon off the skewers to cook the bacon more. Otherwise my family wouldn’t eat the bacon since the middle wasn’t cooked well enough
