How to Make Vanilla Creme Brulee on a Blackstone Griddle (or in the Oven)

To start this crème brûlée recipe, you’ll want to prepare a classic vanilla custard base. Check out my Griddle Creme Brulee recipe for the full step by step detailed recipe.

I use simple ingredients—heavy cream, egg yolks, sugar, and vanilla—to create that rich, silky texture. Once mixed, the custard is poured into small ramekins.

On the Blackstone Griddle:

  • Preheat your Electric Blackstone Griddle to a low, even heat
  • Place ramekins in a shallow pan with a water bath
  • Cover with a dome lid to trap heat
  • Cook gently until the custard is set but still slightly jiggly in the center

In the Oven:

  • Bake ramekins in a water bath at 325°F
  • Bake until just set with a slight wobble in the center

Once done, let the custard cool completely, then refrigerate until fully set. This base is what makes this Dubai chocolate recipe so creamy and luxurious.

How to Make Dubai Chocolate Creme Brulee

Now for the fun part—layering!

Once your vanilla custard is chilled and set, you’ll build your Dubai Chocolate Crème Brûlée in layers:

  1. First Layer: Pour and spread a thin layer of melted chocolate over the set custard. Let it chill until firm.
  2. Second Layer: Add a layer of your rich Dubai chocolate filling and smooth it evenly. Chill again until set.
  3. Final Layer: Finish with another thin layer of melted chocolate on top and refrigerate until fully set.

Ingredients

  • Heavy Whipping Cream 12 fl. ounces
  • Milk 4 fl. ounces
  • Vanilla Extract 1/4 teaspoon
  • Egg yolks 5 large (about 3 ounces)
  • Sugar, Granulated 3.5 ounces
  • Milk Chocolate, melted 8 ounces
  • Dubai Chocolate Filling 10 tablespoons

Instructions

    How to Make the Vanilla Crème Brûlée Custard

    Step 1: Preheat the Cooking Surface (Griddle or Oven)

    Blackstone Griddle:
    Preheat your Electric Blackstone Griddle to medium heat or about 350°F.

    Oven:
    Preheat oven to 325°F.


    Step 2: Heat the Cream Mixture

    In a medium saucepan, combine:

      - Heavy Whipping Cream
      - Milk
      - Vanilla Extract

      Heat over medium heat, stirring often to prevent burning until small bubbles form around the edges. Do not boil. Remove from heat.


      Step 3: Prepare the Egg Mixture

      In a mixing bowl, beat the egg yolks for about 1 minute on low to medium speed. Slowly add the sugar while mixing until combined and slightly thickened.


      Step 4: Temper the Eggs

      Slowly pour about 1/2 cup of the hot cream mixture at a time into the egg yolks while mixing continuously. Continue adding the cream slowly until all is combined. This prevents scrambling the eggs.


      Step 5: Strain the Custard

      Pour the custard mixture through a fine mesh strainer into a pourable container. This creates a smooth, silky crème brûlée texture.


      Step 6: Fill the Ramekins

      Divide the custard evenly between five (4-ounce) ramekins.


    How to Cook Crème Brûlée (Blackstone Griddle and Oven)

      Step 7: Create a Water Bath

      Place the filled ramekins into a high-sided metal pan. Carefully pour warm water into the pan until it reaches about 2/3 up the sides of the ramekins. Place the pan on the preheated griddle and cover with a dome lid. Or place the pan in the oven to bake.


      Step 8: Cook the Custard

      Griddle Cook for 40–60 minutes. Start checking at 40 minutes. The custard should be mostly set with a slight jiggle in the center.


      Oven Method - Bake at 325°F for 35–50 minutes or until the centers are just slightly jiggly.


      Chill the Custard

      Step 9: Cool and Refrigerate

      Remove ramekins from the water bath. Let cool to room temperature. Dry the ramekins, cover, and refrigerate for at least 4 hours or up to 2 days.


      Add the Dubai Chocolate Layers


      Step 10: First Chocolate Layer

      Pour a thin layer of melted milk chocolate over each chilled custard and spread into a thin even layer. Refrigerate until firm.


      Step 11: Add Dubai Chocolate Filling

      Spoon about 2 tablespoons Dubai chocolate filling over each ramekin and spread evenly. Refrigerate until set.


      Step 12: Final Chocolate Layer

      Top each ramekin with another thin layer of melted chocolate and spread that layer evenly. Refrigerate until fully firm.


      Garnish and Serve


      Step 13: Decorate if Desired

      Decorate with fruit pieces, whipped cream, or the topping of your choice. Serve chilled.
