Chicken and Veggie Smoked Kabobs

Chicken and Veggie Smoked Kabobs is super easy to make and a very delicious meal that will be loved by your whole family.  These Smoked Chicken skewers are marinated with an Italian dressing which creates a very tender and tasty kabob.

When you smoke kabobs on a pellet smoker, you add an extra layer of smoky flavor than you would with just a grill.  Smoked chicken and veggie kabobs are a healthy meal that is a great way to use up some of your garden vegetables.

How long does it take to smoker grill chicken kabobs?

Smoking time will vary depending on the type of pellet smoker, the temperature you are using, the size of the pieces of chicken and vegetables, the number of times that you open the smoker door, and a countless number of variables. 

A general rule of thumb would be about one hour.  If you want the chicken kabobs done sooner, start the heat at a lower temperature for about 30 minutes and then turn it up to 350°F or 400°F until they are cooked properly.

Low and slow is the best way to smoke chicken in the beginning stages and then turn the heat up at the end of smoking to get a nice, caramelized texture on the marinated chicken pieces.

Best Wood to Smoke Chicken and Veggies

The best wood pellets to smoke the chicken and veggie kabobs is a very personal preference.  I like to use competition blend pellets for our RecTeq smoker

If you like a sweeter piece of meat, then smoke with fruit wood chips such a cherry or apple.  Other great choices would be hickory, walnut, or oak wood pellets.

Chicken and Veggie Smoked Kabobs Ingredients

  • Boneless Skinless Chicken Breasts – Thighs or Chicken Breast pieces can be used.
  • Italian Dressing – Bottled or Homemade dressing will work.
  • Onion, White – Large Pieces – can use yellow onion, or red onions.
  • Peppers, Multi-Colors – 1 Inch Pieces – Can use Fresh Sweet Peppers, Bell Peppers, and if you want some spice, you can use Jalapeno Peppers. Red bell pepper adds color to the kabobs.
  • Mushrooms – White or Mini Bella.
  • Tomatoes – Grape or Cherry Tomatoes work best!
  • Skewers – Metal Skewers or Wooden Skewers will work.

More Possible Kabob Ingredients

Pineapple Chunks

Teriyaki Seasoning instead of Italian Seasoning for the Marinade.

More Vegetables – Such as Broccoli Crowns, Cauliflower Pieces, Zucchini Pieces, or Summer Squash Chunks such as Yellow Squash.

Chicken Kabob Marinade

Marinating the boneless skinless chicken before cooking is very important.  It adds extra flavor to the chicken and creates a very tender piece of chicken. 

Keep it simple by using bottled Zesty Italian dressing.  Or create a homemade marinate using your favorite Italian dressing recipe. 

No salt and pepper is needed due to the marinade. Throw away any excess marinade ingredients.

How to Make Smoked Chicken and Veggie Kabobs

Making kabobs is super easy! The skinless chicken breasts should be cut into 1-inch squares. 

Place the chicken pieces in a large bowl or a Ziplock bag to marinate.  Add the Italian dressing on top of the chicken and close the bag. 

Stir to combine and cover the bowl if using.  Place in the refrigerator overnight or for at least 1 hour but up to 24 hours before cooking. 

I like to start marinating the chicken pieces at dinner the night before and keep in the refrigerator overnight so that it is ready when it’s time to assemble the skewers.

How to Assemble Chicken and Veggie Kabobs

Gather all your ingredients to make your chicken smoked kabobs.  The vegetable pieces should be cut into 1-inch pieces.

Prepping all the chicken and vegetable pieces before you start to assemble them if very important.  If using wood skewers, make sure to soak them in water ahead of time I like to use sturdy metal skewers

Assemble the shish kebabs by starting with a piece of onion.  Poke it directly in the center being careful not to poke your hand on the other side of the onion piece. 

Place on a baking sheet pan. Repeat this process with a piece of marinated chicken, pepper, mushroom, and tomato making sure not to pack them too tightly together but not leaving spaces between pieces. 

Then repeat again, and again until your skewer is full.  Leave a little room on the end to be able to handle the chicken kebabs.

Throw away any leftover Italian dressing marinate. Place assembled kabobs on a plate and work on the next one until all the ingredients are gone.        

How to Smoke Kabobs

Preheat your smoker to 250°F.  Fill the bin with your favorite wood pellets.  When using my RecTeq pellet grill or a Traeger grill, I like to use combination blend pellets.  If using a wood smoker such as a Masterbuilt, use water-soaked wood smoker chips. 

Once the smoker grill has reached the desired temperature, place the fully assembled vegetable and chicken kabobs onto the smoker grill grates.  Close the grill lid and let smoke for 45 to 1 hour.

Use a pair of tongs and flip the kabob, half way through cooking. You may have to release sticky pieces that do not want to release from the grill grate.

Turn the smoker up to 400°F and cook the smoked kabobs until they have reached the proper temperature.  Make sure that the chicken pieces  have reached an internal temperature of 165°F and are fully cooked.

Grilled chicken kabobs cook quickly, so do not overcook.  Remove each chicken kabob from the smoker grill.  

Place on a clean baking sheet pan or serving platter. Serve warm with your favorite side.

This skewer recipe is great all by itself with a variety of veggies and the amazing smoky chicken pieces.

How to Store Smoked Chicken Kabobs

Smoked chicken kabobs make a great leftover meal!  Once the kabobs have cooled down, remove from the skewers and store in an airtight container for up to 6 days. 

Reheat in the microwave, on the smoker using a foil boat dish, on the stove in a sauté pan, or in the air fryer.

How Long do Chicken Kabobs take in the Smoker?

When using a smoker to cook your chicken kabobs, remember that low and slow is best.  Which means that it will take about one hour to one and a half hours to cook.  Turn the heat up on the smoker during the final stages to help create a nice caramelized outer shell on the kabobs. 

Do I need to marinate the chicken before cooking?

Yes, it is recommended that you marinate the chicken before cooking to help break down the connective tissues in the meat.  It also aids in giving the chicken a little bit of extra flavor.

Ingredients

  • Boneless Skinless Chicken Breasts 2 pieces
  • Italian Dressing 1/4 cup
  • Onion, White - 1-inch Pieces. 1 each
  • Pepper, Bell - 1-inch Pieces 1 each
  • Mushrooms, White - 1-inch Pieces. 8 ounces
  • Tomatoes, Grape or Cherry 8 ounces
