Smoked Hasselback Potatoes (Bacon & Cheese)

Eating Smoked Hasselback Potatoes that’s topped with savory bacon pieces and melted cheese is very satisfying with its crispy layers and superior taste!  This best potato recipe is a big step up from your average baked potatoes.

Cooking these potatoes will be done in stages.  The first stage is steaming and baking it.  The second stage is opening the foil to let the potatoes absorb the smoky flavor and crisp up the slices. 

And the final stage is adding the shredded cheese and crispy bacon pieces.  Hasselback Potatoes of pellet grill is rich in buttery flavor that is great for any meal.

What Kind of Potato for a Hasselback?

The best kind of potato to use when making Hasselback potatoes are medium sized russet potatoes.  You want a potato that will cook up well, hold its shape, and tastes great. 

Other great options are a Yukon Gold or Yellow potatoes.  If you would like to completely switch up the flavor, use sweet potatoes instead.

Whatever potatoes that you decide to use, make sure to wash them well before cutting them!  A scrub brush works best with cold running water. 

There is nothing worse that chewing on sand as you are trying to eat your smoked potatoes. 

Cutting Hasselback Potatoes

I like to slice my potatoes using a sharp knife and cutting board.  Do not cut all the way through the potato. 

Make sure to leave the bottom uncut to hold the potato all together.  Try to cut the potato slices in thin even layers.

If you are making a lot of Hasselback potatoes, then you might want to invest in a Master Chef Hasselback Potato Slicer.  This slicer creates perfect slices in a short amount of time. 

You can also buy a Hasselback Potato Slicing Board to make sure you don’t cut all the way through the potato. 

How To Make Smoked Hasselback Potatoes?

Gather the ingredients to make your Hasselback Potato Recipe.  Preheat the smoker grill to 250°F.

My favorite smoker grill is a RecTeq pellet smoker.  If using smoker pellets, make sure to fill the bin with your favorite brand pellets.  My family likes to use the competition blend pellets

After they are sliced, take about one tablespoon of softened butter (unsalted butter or salted butter), and spread all over your potato.

Season with your favorite spices (salt and pepper will work) onto the outside of the potato.  Wrap the seasoned buttered potato in a piece of foil. 

How to Smoke Hasselback Potatoes

Once the smoker is preheated, then place the foil wrapped Hasselback Potatoes onto the grill grate and cover with the lid.  No drip pan needed.

Turn the potatoes after cooking 30 minutes with a pair of tongs.  After one hour, open the foil on the potatoes to allow them to absorb the smoky flavor. 

Leave the Hasselback potatoes unwrapped and sitting in the opened foil.  Carefully separate or fan the potato slices.  This will help the slices cook and become crispy. 

Continue cooking the potatoes until they are done.  Check for doneness by gently squeezing the side of the potato. 

If the potato is still hard and has no give, cook longer.  If the potato is squishy as it is squeezed, then it is done. 

You can also poke a fork in the center of the potato to see if it is done.  Cooking times will vary depending on the smoker, the outside temperature, the number of times you open and shut the smoker door, and the size of the potatoes. 

Garnishing the Hasselback Potatoes

After the potatoes are completely cooked and still on the smoker, sprinkle them with bacon bits and a generous amount of shredded cheese. 

Use your favorite cheese that you like such as cheddar, pepper jack, Colby jack, Mexican blend, and Italian blend will all work. You can even use slices of cheese if you like.

Let the cheese melt.  Carefully remove from the smoker grill to a serving tray. 

Add any additional toppings such as a drizzle of ranch dressing, a dollop of sour cream and a sprinkle of freshly chopped chives.  Serve hot with your favorite main dish.

Optional Garnish Add-ons

  • Steamed Broccoli
  • Pulled Pork or Shredded BBQ Pulled Pork
  • Diced Fresh Herbs
  • Drizzled Melted Butter or Olive Oil
  • Diced Ham Pieces

How to Reheat Leftover Hasselback Potatoes?

If you have a leftover Hasselback potato, store it in an airtight container in the refrigerator for up to 6 days. 

It can be reheated on the smoker grill, microwave oven, kitchen oven, or air fryer until hot.  Reheating times will vary, so check often for doneness.

Do you wrap Hasselback potatoes in foil for smoking?

Yes, completely wrapping them in foil for the first hour.  This helps to steam cook the potatoes. Open the foil up to get that great smoky flavor into the potatoes and get great crispy slices.

How long do Hasselback potatoes take to smoke?

Plan on about two to three hours at 250°F. If cooking at a higher temperature along with other smoker items, grill the potatoes for a shorter amount of time.

Smoked Hasselback Potatoes

Ingredients

  • Potatoes, Russet 2 each
  • Butter, Softened 2 tablespoons
  • Salt 1/2 teaspoon
  • Pepper 1/4 teaspoon
  • Bacon, Cooked, Crumbled 2 tablespoons
  • Cheese, Shredded. 1/4 cup

Instructions

  1. Gather all the ingredients to make your Smoked Hasselback Potato Recipe.
  2. Wash your russet potatoes well! Use a scrub brush to get all the dirt off.
  3. With a sharp knife, make thin slices into each potato. Making sure NOT to cut all the way through the potato. Leave a little bit on the bottom to keep the potato together. If you want crispier pieces of potatoes, cut very thin slices, but if you want softer pieces then cut your slices a little thicker. You can also use a Hasselback Cutter or Guide to help in the cutting process.
  4. Next, take one tablespoon of soft butter per potato and spread all over your potato.
  5. Sprinkle some seasoning of your choice onto the outside of the potato.
  6. Wrap each buttered, seasoned potato in a piece of foil.
  7. Preheat the smoker grill to 250°F.
  8. Once the pellet smoker is preheated, place the foil wrapped Hasselback Potatoes onto the grate and cover with the lid.
  9. Turn the potatoes after 30 minutes with a pair of tongs.
  10. After about one hour, open the foil potatoes and carefully separate or fan the slices. Cook until potatoes are done.
  11. Sprinkle with bacon pieces and a generous amount of shredded cheese on top of the potato. Cover with the lid until the cheese is melted.
  12. Leave the smoked Hasselback potatoes unwrapped but still in the foil.
  13. When potatoes are fully cooked, remove from the grill. Place on a serving tray. Add your favorite topping such as a drizzle of ranch dressing, or a dollop of sour cream along with a sprinkle of chives.
  14. Serve hot with your favorite main dish.

  1. I am a big fan of Hasselback potatoes, but I honestly didn’t know what I was missing before I tried this recipe! The bacon and cheese added so much flavor to the dish, that I could have eaten an entire plateful of just these potatoes. A great side dish to add to the weekly repertoire!
