Smoked Pulled Pork Mac and Cheese

My recipe for Smoked Pulled Pork Mac and Cheese is so easy to make and highly requested by my family and friends.  Full of smoky flavor and made in about 1 ½ hour.

This smoker-cooked pork mac and cheese recipe is perfect for using leftover pulled pork. Even better yet, leftover smoked pulled pork! 

Creamy, cheesy – they serve the masses. Two favorite comfort foods in one: macaroni -n- cheese and pulled pork.

Best Cheese for Homemade Mac and Cheese

Mixing and matching of different cheeses gives you amazing flavor profiles.  I recommend buying a brick of cheese and grating your own. 

Purchasing packaged shredded cheese is not recommended.

  • Colby – Jack
  • Cheddar – Sharp cheddar cheese, Mild cheddar cheese, Double, Extra Cheddar, white cheddar cheese
  • Velveeta – For a creamy smoked mac and cheese texture.
  • Parmesan Cheese
  • American Cheese Slices

Best Pulled Pork

Macaroni and cheese recipe is the main ingredient to this pasta recipe.  Use your favorite pulled pork recipe. 

Use slow cooker leftover pulled pork or crock pot pulled pork. Make my Instant Pot Pulled Pork for an easy recipe. 

If you want to add an extra layer of flavor, then make my Smoked Pulled Pork recipe that is slow cooked for several hours and has unbelievable smoky flavor!!

Don’t have time to make shredded pork?   Buy a container of pre-packed pulled pork in the deli meat section of your favorite grocery store. 

Add bbq sauce to the pulled pork before topping the creamy mac and cheese recipe.

How to Cook Macaroni Noodles

You will want to make the mac noodles al dente.  Giving the cooked noodles plenty of opportunity to expand more and not become too mushy.

The macaroni noodles will cook more in the smoker.  Use a large pot of boiling hot salted water over medium heat, cook pasta.  

Add the elbow macaroni and boil several minutes. Stir every couple minutes.

Over cooking from the start, will end up with mushy mac -n- cheese.  Follow the package directions for cooking the macaroni. 

Use the lower end of the cooking time.  Drain the pasta and rinse with cold water.  Cooking the pasta can be done a day ahead of time.

How to Make Smoked Mac and Cheese

Gather the ingredients to make your meal.  I used elbow macaroni in this recipe.

Use a 9 x 13 Pyrex baking dish.  (You can also use a large cast iron skillet or an aluminum pan if you want a crispy bottom.)

Spray the inside of the baking dish with cooking spray.  Cut the Velveeta cheese into small pieces. 

Grate all the cheese and set aside until ready to use.  Pour about ½ cup of canned milk in the bottom of the baking dish. 

Add a couple pats of butter or margarine and spread around the bottom of the pan.  In an extra-large bowl, combine the cooked noodles, shredded cheese, cubed Velveeta cheese, and the rest of the canned milk. 

If desired, season with about ½ teaspoon each of salt and pepper.  Pour half of this noodle/cheese mixture into the Pyrex baking dish and spread evenly. 

Place the remaining butter or margarine in pats on top of the mac and cheese mixture.  Then top with several slices of the American cheese. 

Add the remaining noodle/cheese mixture in an even layer.  Reserve the pulled pork for a later step.

How to Smoke Pulled Pork Mac and Cheese

Preheat the Smoker to 350°F.  Fill the pellet bin with your desired pellets.  My pellet of choice is the Competition Blend.

Once the smoker has come up to temperature, place the baking dish of mac and cheese onto the grill.  Smoke for 20 minutes.

Using hot pads, stir the mac and cheese.  Add in the remaining slices of American cheese.  Smoke for another 20 minutes. 

Place a layer of shredded pulled pork or BBQ sauced pulled pork on top of the pasta dish.  Optional: for an extra layer of flavor add a drizzle of barbecue sauce over top of the pork.

Continue cooking until the pulled pork mac-n-cheese is bubbling around the edges.  Serve immediately.   

How Long to Smoke Pulled Pork Mac and Cheese?

If you smoke your pulled pork mac n cheese at 350°F, it will take about 60 – 70 minutes to cook. 

If more smoke is desired, start the smoker at 250°F and smoke for 30 – 40 minutes.  Stir the macaroni dish and add the American cheese slices. 

Next, turn the smoker up to 350°F and continue smoking until the smoked mac and cheese is bubbling around the edges.  Note: the entire pan will not be bubbling.

You want to see lightly browned pieces on the top. This pasta dish is best served hot, right off the smoker.

How to Store Pork Mac

Store any leftover pulled pork mac in an airtight container in the refrigerator for up to 6 days.  Reheat in the oven, microwave, or smoker grill.  

I do not recommend cooking and reheating this dish because you will end up with a different texture mac n cheese.  It can be done though, but just expect the pasta recipe to be different.

Pulled Pork Mac and Cheese – FAQ

Can pork mac be done ahead of time?

It is possible to prepare this ahead of time. Just cook when you are ready to eat. Prepare, cover, and refrigerate the entire dish until ready to smoke. Take the plastic wrap off before cooking.  I do not recommend cooking and reheating this dish because you will end up with a different texture mac and cheese.  It can be done though, but just expect the pasta dish to be different.

Why is my smoked pulled pork mac and cheese dry?

If you have dry mac n cheese then you need to add more liquid, shredded cheese, and Velveeta cheese.  Velveeta cheese will give you a creamy texture. These help combat the dry texture.  Dry mac n cheese could also be caused from over cooking.

Ingredients

  • Elbow Macaroni Noodles, Dry 1 Pound
  • Colby Cheese, Freshly Shredded 1 Pound
  • Extra Sharp Yellow Cheddar, Freshly Shredded 8 ounces
  • Velveeta Cheese 4 ounces
  • Milk, Evaporated Canned 12 ounces
  • Butter 1/4 cup
  • American Cheese Slices 9 Slices
  • Pulled Pork 10 ounces
  • BBQ Sauce 2 tablespoons

How to Cook Macaroni Noodles

Over cooking the noodles from the start, will end up with mushy mac -n- cheese.  Follow the package instructions for cooking the macaroni.  Use the lower time for cooking.  Drain the al dente pasta and rinse with cold water.  Cooking the pasta can be done a day or two ahead of time.

How to Make Smoked Mac and Cheese

  • Gather the ingredients to make your pasta dish recipe.  I used elbow macaroni noodles in this recipe. Use a 9 x 13 Pyrex baking dish, large cast iron skillet, or aluminum pan.  Spray the inside of the pan with non-stick cooking spray.  Dice the Velveeta cheese into small pieces.  Grate all the cheese. Set aside until ready to use.  Add about ½ cup of canned evaporated milk in the bottom of the baking dish.  Add a couple pieces of butter or margarine on top of the milk.   In a very large mixing bowl, combine the cooked noodles, shredded cheese, cubed Velveeta cheese, and the rest of the milk.  If desired, season with about ½ teaspoon of salt and 1/4 teaspoon of pepper.  Pour half of the pasta mixture into the baking pan and spread evenly.  Place the remaining butter or margarine in pieces on top of the macaroni and cheese mixture.  Then top with slices of the American cheese.  Add the remaining noodle mixture in an even layer.  Reserve the pulled pork for a later.

How to Smoke Pulled Pork Mac and Cheese

  • Preheat the pellet smoker to 350°F.  Fill the pellet bin with your desired pellet flavor.  My choice of pellets is the Competition Blend. Once the smoker has come up to temperature, place the uncovered dish of mac and cheese onto the grill.  Cook for about 20 minutes. Using hot pads, carefully stir the mac and cheese.  Add in the remaining pieces of American cheese.  Smoke for another 20 minutes.  Place a layer of barbecued pulled pork or regular pulled pork on top of the pasta dish.  Continue cooking until the pulled pork mac-n-cheese is bubbling around the pan edges.  To garnish and extra layer of flavor, add a drizzle of barbecue sauce over top of the pork. Serve immediately.

Mixing and matching of different cheese flavor gives you amazing flavor profiles.  I recommend buying a block of hard cheese and grating your own.  Purchasing packaged shredded cheese is not recommended but can be used.
