Griddle cakes are a cake that is baked on a griddle flat top.  It is also known as a pancake that is cooked on a griddle.  This recipe is not pancakes, it is an actual baked cake!!

Others have asked, “Why would you want to bake a cake on a griddle?” When you are camping and don’t have an oven, but want to celebrate a special occasion then baking on the griddle might be your only option.

Helpful Tips to Make a Cake on a Griddle

  • Griddle temperature – LOW – When baking on the griddle, make sure dial is set to the lowest temperature possible.
  • Wind guards are not needed when baking.  The wind guards trap the heat making the flat top hotter.  So whenever you are baking take the wind guards off.  
  • Every griddle will bake differently so baking times are just estimates.  Watch the baking cake closely until you get used to making baked goods on your griddle.  
  • Are your cakes burning on the bottom? Make sure the temperature is as low as it will go. Take 2 strips of foil and crumple them into a long log shape.  Then set the 2 pieces into an X shape on the griddle.  Place the cake pan on top of the foil so that the cake is level.  Bake as you normally would.  
  • To test for cake doneness, use a toothpick.  When you feel the cake is done, insert a toothpick into the cake.  If the cake is done, the toothpick will come out clean.  If the cake is not done, the toothpick will have some wetness from the batter and should be cooked longer. 

How to Make a Griddle Cupcake Cake

This recipe is super simple because you will use a cake mix.  Use your favorite cake recipe if you feel adventurous but remember that baking times will vary.  

To make your Blackstone griddle cake, gather all the ingredients. 

Cake Ingredients - cake mix, eggs, oil and water.

Turn the griddle on to the lowest setting, to pre-heat the flat-top.  

Combine the eggs, oil, cake mix and the water in a mixing bowl making sure to follow the directions on the box.  Using a KitchenAid mixer works best.  Mix for 2 minutes to help smooth out the lumps in the batter.

Use this pan grease recipe HERE, to coat the inside of your 4 inch round pan.  With a #20 scoop, measure 3 level scoops per pan. 

Do you want a larger cake? Use an 8 or 9 inch round pan and use 6 level scoops per pan or 1/2 of the cake batter. Adjust the cooking time for a larger cake.

How to Bake on a Blackstone Griddle

With the griddle pre-heated on low, place the pan onto the griddle and use a basting cover to completely go overtop the cake pan.  This creates an oven by trapping the heat under the lid to bake the cake.

After about 10 minutes, gently lift the lid part of the way to see how the cake is baking.  If it looks completely done, use a toothpick to check for doneness.  If the cake is not done, bake a few minutes longer.  

Is your cake burning on the bottom or darker than you want.  Take 2 pieces of foil and crumple each into a long log.

When you are ready to bake your griddle cakes, place the foil pieces into an X on the griddle and place the pan on-top of the foil pieces.  Make sure your cake pan is level.  Bake as normal.

If the top of the cake has a hump, then cut to make level. You can use a knife or a cake leveler to get an even cut.

Make this frosting ahead of time and store in an air-tight container.  For a professional look, use a #2D Wilton star tip and a piping bag to apply the frosting to the cake.  Finish the cake with your favorite sprinkles for an extra special touch.
