How To Make Cupcakes on a Blackstone Griddle

Cupcakes on a Blackstone Griddle are so moist and fluffy!  Griddle cupcakes bake in 10 minutes and are so easy to make.  

Pair with my easy Buttercream Frosting for a tasty treat that the whole family will love!  Blackstone baking is not really talked about in #griddlenation to much.  I am here to change that!!

Blackstone Griddle Cupcake Tips

  1. LOW HEAT – make sure that your griddle is set to the lowest heat possible.  You want to cook low and slow with the heat that is trapped in the cover that you use over the cupcakes.
  2. The time that is provided is just an estimate!!  Just like regular baking, every griddle is different so the time will vary.
  3. Do not use your wind guards if you have them.  The trick is to not let the griddle get to hot so that it burns the cupcakes on the bottom.
  4. Use the toothpick test to check if the cupcakes are done.  Once the toothpick is inserted in the cupcake it should come out clean with maybe a few crumbs on it.  If there is any wetness on the toothpick, cook a little bit longer.
  5. If the cupcakes are burning on the bottom, crumple up a few strips of foil and place them in the shape of an X on top of the griddle. Then set your cupcake pan over the foil and cook the 10 minutes with a cover over top the cupcake pan.

How to Make Cupcakes with Cake Mix

Learn how to make Blackstone cupcakes with a cake mix.  You can use your favorite cake recipe but I have made this super simple so anyone can learn.  

Gather all the ingredients to make your Blackstone cupcakes.

Pre-heat your griddle to the lowest setting.  In a mixing bowl combine the eggs, oil, water, and cake mix according to the directions on the box.  

Make sure to mix for 2 minutes to help smooth out the lumps in the batter.  Just do not over mix your batter.

Place paper liners into your metal cupcake pan.  With a # 20 scooper, fill the cupcake liner no more than 2/3rd full.  

How to Make Cupcakes

With a warmed-up griddle, set the cupcake pan on the heated griddle and cover the whole pan right away.  You can use a basting cover, the hard cover griddle lid if you have one or just use a dollar store disposable foil pan.

This helps to trap the warm heat of the griddle like an oven to bake the cupcakes. Just make sure that you are not checking the cupcakes to much so that the heat escapes the cover.  

Slightly peak when checking the cupcakes for doneness.  Do the toothpick test to check for doneness of the cupcakes.

If you find that the cupcakes are burning on the bottom, then do the crumpled foil strips made in an X on top of the griddle but under the cupcake pan trick and see if that helps.

This frosting can be made ahead of time and store in an airtight container.  Just stir when ready to use.  

Spread on cupcakes with a knife or for a more professional look, use a piping bag with a #2D Wilton star tip.  Add your favorite sprinkles for an even more special touch.

  • Vegetable Oil 1/3 cup
  • Eggs, Large 3 each
  • Water 1 cup
