Why Combine Deep Frying with Griddle Cooking?

Combining deep frying with griddle cooking allows you to create a diverse range of dishes.  Make smash burgers on one side of the griddle and deep fry some French fries on the other side of the griddle. 

The griddle’s large, flat surface is perfect for cooking side dishes to go along with an assortment of griddle fried chicken wings.  Make a griddle charcuterie board with an assortment of griddle snacks and deep fried appetizers.

What oil should I use for deep frying?

Choose an oil with a high smoke point, such as vegetable oil, canola oil, or peanut oil.  These oils can withstand the high temperatures required for deep frying without breaking down.

How do I know when the oil is hot enough for frying?

Use a deep frying thermometer to monitor the oil temperature.  Most deep frying recipes call for an oil temperature between 350°F and 375°F.  You can also test the oil by dropping a small piece of batter into it, if it sizzles and floats, the oil is ready.

How often should I change the oil in my deep fryer?

For the best results and to maintain the flavor of your food, change the oil after 5-7 uses, or sooner if it becomes dark and when the foods you are cooking, taste off.
