Grilled Cheese Egg Salad Ingredients
- 6 Hard-boiled Eggs, chopped
- 1/4 cup Mayonnaise
- 1/4 cup diced Celery
- 1/4 cup diced Cucumber
- Salt, to taste
- Black pepper, to taste
- 6 slices Bread
- 6 slices Cheddar Cheese
- 2 tablespoons Butter
How to Make an Egg Salad Grilled Cheese Sandwich
Start by preparing the egg salad. In a medium bowl, combine the chopped hard-boiled eggs, mayonnaise, diced celery, and diced cucumber. Season with salt and pepper to taste. Stir until well combined. Taste the egg salad and adjust to get the right flavor, if needed. Refrigerate while preparing the grilled cheese.
Preheat your Blackstone Griddle to medium heat. Butter both sides of bread.
Place all six slices of bread, butter side down, onto the hot griddle. When the bread is golden brown, flip over. Add the slices of cheddar cheese to each slice of bread. Cook until the slices are golden brown and crispy.
Remove the grilled cheese sandwiches slices from the griddle and place them on a separate board. Carefully spoon a generous amount of egg salad onto one side of each sandwich. Place the top slice on the sandwich and serve immediately.

Instructions
- Prepare the Egg Salad
In a medium bowl, combine the chopped hard-boiled eggs, mayonnaise, diced celery, and diced cucumber. Season with salt and pepper to taste. Stir until well combined. Taste and adjust the seasoning if needed. Refrigerate while preparing the grilled cheese. - Preheat the Blackstone Griddle
Preheat your Blackstone Griddle to medium heat. - Butter the Bread
Spread butter on both sides of each slice of bread. - Toast the Bread and Melt the Cheese
Place all six slices of bread on the hot griddle. Cook until the first side is golden brown, then flip the bread over. Add a slice of cheddar cheese to each piece of bread and continue cooking until the bread is golden brown and crispy and the cheese is melted. - Remove from the Griddle
Transfer the grilled cheese slices from the griddle to a cutting board or serving tray. - Assemble the Sandwiches
Spoon a generous amount of egg salad onto three slices of the grilled cheese bread. Top with the remaining three slices to create sandwiches. - Serve and Enjoy
