I cooked the grilled cheese on my Blackstone Griddle for a perfectly golden, crispy crust, then assembled the egg salad sandwich fresh off the griddle.

This recipe is simple to make, packed with flavor, and a great way to use hard-boiled eggs. Whether you’re preparing a quick lunch, easy dinner, or satisfying weekend meal, this sandwich is sure to become a family favorite.

Grilled Cheese Egg Salad Ingredients

  • 6 Hard-boiled Eggs, chopped
  • 1/4 cup Mayonnaise
  • 1/4 cup diced Celery
  • 1/4 cup diced Cucumber
  • Salt, to taste
  • Black pepper, to taste
  • 6 slices Bread
  • 6 slices Cheddar Cheese
  • 2 tablespoons Butter

How to Make an Egg Salad Grilled Cheese Sandwich

Start by preparing the egg salad. In a medium bowl, combine the chopped hard-boiled eggs, mayonnaise, diced celery, and diced cucumber. Season with salt and pepper to taste. Stir until well combined.  Taste the egg salad and adjust to get the right flavor, if needed.  Refrigerate while preparing the grilled cheese.

Preheat your Blackstone Griddle to medium heat. Butter both sides of bread.

Place all six slices of bread, butter side down, onto the hot griddle. When the bread is golden brown, flip over.  Add the slices of cheddar cheese to each slice of bread. Cook until the slices are golden brown and crispy.

Remove the grilled cheese sandwiches slices from the griddle and place them on a separate board. Carefully spoon a generous amount of egg salad onto one side of each sandwich. Place the top slice on the sandwich and serve immediately.

The combination of warm melted cheese and cool creamy egg salad creates an incredible flavor and texture combination that is hard to resist.

What to Serve with Egg Salad Grilled Cheese

Yes. The egg salad can be prepared up to two days in advance and stored in an airtight container in the refrigerator.

Can I use a different cheese?

Absolutely. American, Swiss, Colby Jack, Pepper Jack, or Provolone cheese all work well in this recipe.  You can even mix and match to create different flavor combinations!!

Can I make this sandwich without a Blackstone Griddle?

Yes. A cast iron skillet, non-stick frying pan, or flat-top griddle will work just as well.

How do I store leftovers?

Store leftover egg salad separately in the refrigerator for up to 3 days. For best results, prepare the grilled cheese fresh before serving.

Can I add additional ingredients?

Yes. Try adding bacon, green onions, diced pickles, sliced avocado or sliced tomatoes for additional flavor.

Grilled Cheese Egg Salad Sandwich made on a Blackstone Griddle

This Egg Salad Grilled Cheese Sandwich combines creamy homemade egg salad with melted cheddar cheese and crispy toasted bread for an easy comfort food meal. Cooked on a Blackstone Griddle, it's perfect for lunch, dinner, or using up hard-boiled eggs.

Ingredients

  • Hard-boiled Eggs, chopped 6 each
  • Mayonnaise 1/4 cup
  • Celery, diced 1/4 cup
  • Cucumber, diced 1/4 cup
  • Salt, to taste
  • Black Pepper, to taste
  • Bread 6 slices
  • Cheddar Cheese 6 slices
  • Butter, softened 2 tablespoons

Instructions

    1. Prepare the Egg Salad
      In a medium bowl, combine the chopped hard-boiled eggs, mayonnaise, diced celery, and diced cucumber. Season with salt and pepper to taste. Stir until well combined. Taste and adjust the seasoning if needed. Refrigerate while preparing the grilled cheese.
    2. Preheat the Blackstone Griddle
      Preheat your Blackstone Griddle to medium heat.
    3. Butter the Bread
      Spread butter on both sides of each slice of bread.
    4. Toast the Bread and Melt the Cheese
      Place all six slices of bread on the hot griddle. Cook until the first side is golden brown, then flip the bread over. Add a slice of cheddar cheese to each piece of bread and continue cooking until the bread is golden brown and crispy and the cheese is melted.
    5. Remove from the Griddle
      Transfer the grilled cheese slices from the griddle to a cutting board or serving tray.
    6. Assemble the Sandwiches
      Spoon a generous amount of egg salad onto three slices of the grilled cheese bread. Top with the remaining three slices to create sandwiches.
    7. Serve and Enjoy
      Serve immediately while the bread is warm and crispy and the egg salad is cool and creamy. The combination of warm melted cheddar cheese and cool, creamy egg salad creates an irresistible sandwich that's perfect for lunch, dinner, or a quick meal.
