Egg Drop Sandwich

An Egg Drop Sandwich is a layer of fluffy eggs, thinly sliced warm ham, melted American cheese between griddle butter toasted thick bread and topped with an egg drop sandwich sauce.  Served on two slices of crispy griddle buttered toast, it makes a delicious egg sandwich that tastes incredible!

A little spicy mayo sauce is drizzled on top of this dish. And not just for breakfast, this Korean egg drop sandwich is ideal for lunch or dinner as it can be easily prepared, and keeps you satisfied for hours on end.

What is Egg Drop Sandwiches?

A popular Korean sandwich served in snack shops, egg drop sandwiches are a Korean eggs sandwich made with fluffy griddle cooked eggs and cheese topped with ham. Add cream when mixing the eggs to give you a rich, creamy fluffy taste.

The Korean egg drop sandwich is prepared with thick buttered toast and a spicy egg drop sandwich sauce.  The scrambled egg sandwich comes with various condiments such as avocado, teriyaki, avocado sauce toppings and garlic bread. 

An egg drop Korea sandwich has become so well-known and has appeared in a popular Netflix South Korean television show called “Hospital Playlist”.

Egg Drop Sandwich Ingredients

  • Bread Slices – brioche bread, white bread
  • Butter
  • Eggs
  • Heavy Cream
  • Ham Slices
  • American Cheese Slice

How to Make Egg Drop Sandwiches

Gather all your ingredients to make the egg drop sandwich recipe.  Preheat the Blackstone Griddle to medium low heat or the Blackstone Griddle E-Series to 400°F. 

In a small bowl, add the eggs and heavy cream.  With a fork, combine the ingredients until completely mixed. 

Once the griddle is hot, add a thin layer of butter to the area you are cooking the eggs.  Pour the egg mixture over top the melted butter and let cook for a few minutes. 

You will have a thin layer of fluffy scrambled eggs where the bottom is cooked, and the top is not.  Using your griddle spatula, quickly push under the egg and flip over. 

Cook a minute more and remove from the griddle.  You want a sheet of the fluffy egg.  Do not cut or scramble the egg into pieces.  Do not overcook the eggs. 

Add the slices of thin ham to the griddle to warm.  Place some more of the butter to a part of the flat top and dip the slices of bread to coat all sides of the bread. 

How to Assemble an Fluffy Egg Sandwich

Toast all sides of the bread until they are golden brown.  To assemble your egg drop Korean sandwich, start with one piece of the toasted bread.  

Next, add the cooked sheet of fluffy scrambled eggs to the bread, top with the slices of griddle cooked ham, and place the slices of American cheese on the ham. 

If desired, drizzle some of the egg sandwiches sauce over top of the melting cheese and finally top with the last piece of the toasted bread.  If needed, use a dome lid over top of the whole fluffy egg sandwich while on the Blackstone Griddle to help melt the cheese.     

Egg Drop Sandwich Sauce

This egg drop sauce is very easy to make.  It is also referred to as sriracha mayo.  Gather all your ingredients to make this egg drop sauce which is store bought mayo (one cup), sriracha hot sauce (one to two tablespoons) and a splash of lime juice. 

Add the mayo of your choice, sriracha, and lime juice to a medium bowl and stir to combine.  If needed, season to taste with salt and pepper. 

If you are sensitive to spicy things, only add 1 tablespoon of sriracha to the recipe, stir and taste.  For my full recipe go to Sriracha Mayo.

How to Store Egg Sandwiches

To store your leftover egg sandwich, wrap in plastic wrap or store in an airtight baggy or container.  Sandwich will last in the fridge for up to 3 days. 

The bread will not be crispy as it was when first made.  To reheat, warm in the microwave, flat top griddle, or in the air fryer. 

I do not suggest freezing this sandwich as the bread will become soggy. This egg drop sandwich is best served fresh right from the griddle.

I don’t have a griddle; can I make this on the stove? 

Yes, you can make this egg sandwich in a fry pan on the stove.  Use medium low heat and work in batches. It will take longer because you will have to work each layer at a time and assemble at the end.

Ingredients

  • Bread Slices 2 each
  • Butter 2 tablespoons
  • Eggs 2 each
  • Heavy Cream 1 tablespoon
  • Ham, Deli Sliced Thin 4 pieces
  • American Cheese Slice. 2 each
  • Egg Drop Sandwich Sauce 1 tablespoon

Instructions

  1. Gather all your ingredients to make the sandwich recipe. 
  2. Preheat the Blackstone Flat Top to medium heat or the Blackstone Griddle E-Series to 400°F. 
  3. In a small bowl, add the eggs and heavy cream and combine until completely mixed.  Once the flat top griddle is hot, add a thin layer of butter to the area you are cooking the eggs.  Pour the egg mixture on top of the melted butter and let cook for a few minutes.  You will have a thin layer of fluffy eggs where the bottom is cooked, and the top is not.  Using your griddle spatula, push under the scrambled egg and flip over.  Cook a minute more and remove from the Blackstone griddle.  You want a sheet of the fluffy scrambled egg.  Do not cut or scramble the egg into little bits.  Do not overcook the fluffy eggs.

  5. To assemble your Korean egg drop sandwich, start with one piece of the griddle bread.  Next, add the cooked sheet of fluffy scrambled egg to the bread, top with the slices of flat top griddle cooked ham, and place the slices of American cheese on the ham. 
  6. If desired, drizzle some of the egg drop sandwich sauce over top of the melting cheese and finally top with the last piece of the toasted bread.  Use a dome lid over top of the whole fluffy egg sandwich while on the Blackstone Flat Top Griddle to help melt the cheese.

  1. The kids went crazy for these!!!
    I couldn’t make them quick enough!
    So fluffy and delicious, especially with some bacon and and cheese (used bacon instead of ham because that is what I had in the fridge)
