A Grissini is a skinny crispy Italian breadstick. Wikipedia defines a grissini as a pencil sized breadstick that is crispy, dry baked and is believed to be originated from Italy.
North America has defined a grissini as a soft baked thin breadstick which can be served savory or sweet, depending on if they are served as an appetizer or as a dessert.

Pizza Dough – Homemade is best!
Ground Cinnamon
Granulated Sugar
Melted Butter – Salted Butter or Unsalted Butter will work
Cream Cheese Icing for Dipping
Grissini Dough
Grissini dough is a very simple pizza dough recipe. This bread stick recipe consists of all-purpose flour or bread flour, salt, granulated sugar, egg, milk, yogurt, oil, active dry yeast, and water.
For best results, use a stand mixer with a dough hook and mixing bowl. Follow my Blackstone pizza dough recipe and use an 8-ounce dough ball to make these breadsticks.
If you don’t want to make your own dough, then a great alternative is buying a frozen pizza dough and letting it thaw.
How to Make Grissini Breadsticks
Preheat the Blackstone Pizza Oven to 425°F. If using your kitchen oven, preheat the oven to 400°F.
The correct temperature is important. Prepare the dough for rolling it out. Make sure the dough ball is at room temperature and slightly risen.
Use a cutting board with a lightly floured surface. Place the dough ball onto the board and roll out with a rolling pin. The dough should be very thin.
Once the rolled-out dough is at the desired thickness, use a pizza cutter to cut the dough into thin strips. Arrange the thin strips of dough onto the ungreased prepared baking sheet pan in a single layer.
No parchment paper because it would hinder achieving golden brown cinnamon sugar breadsticks. You might need two baking sheets.
Make sure to leave a little space between the strips. This helps the strips achieve a crispy texture.
If a fluffier breadstick is desired, let the dough rise in a warm place before baking. Place the baking pan in the center of a preheated oven.
The grissini breadsticks will bake very quickly so leave the pizza oven door off and do not let them burn. Once the bread sticks have turned golden brown, remove them from the oven.
Cinnamon Sugar Mixture
As the grissini Italian breadsticks are baking, prepare the cinnamon sugar mixture. In a small bowl combine the ground cinnamon and sugar.
Place the sugar and cinnamon into a shaker bottle if you have one. In a separate microwavable bowl, add the butter. Microwave the butter until completely melted.

Turning the grissini’s into cinnamon sugar breadsticks is super easy and a great recipe. Once the crispy Italian breadsticks are removed from the Blackstone Pizza Oven and still hot, use a pastry brush to spread a layer of melted butter over the grissini’s.
Sprinkle a layer of the ground cinnamon sugar mixture over the breadsticks. You want the mixture to stick to the grissini. If desired, place on a wire rack.
How to Serve the Cinnamon Sugar Breadsticks
These homemade breadsticks can be served in many ways. Serve hot right from the baking pan. Make a large paper cone for easy serving on the go which makes the perfect treat.
You cann make as an edible decretive centerpiece by placing in glass mason jars and setting in the center of the table along with a side dish of cream cheese dipping sauce to dip them into.
How to Store Cinnamon Sugar Grissini Breadsticks
To store the cinnamon sugar grissini breadsticks place in a large Ziplock bag or storage container. Leave the bag open or the storage container uncovered to keep the crispy breadsticks firm.
Do not use an airtight container. If the bag is closed or the container is covered, the breadsticks might become soft and soggy. Store breadsticks for up to 6 days.
