After discovering the Blackstone Pizza Oven, that’s all I want to make.  Learning how to cook pizzas on the Blackstone Flat Top Griddle has prepared me for making them in the pizza oven. 

Homemade pizzas are better in the pizza oven!  You can make pizzas quickly with the high heat of the pizza oven.

Tools Needed to Make Your Pizza

  • KitchenAid Mixer – Use a KitchenAid Mixer to make homemade pizza dough with little effort. Once you use a stand mixer, you will never make it any other way!!
  • Kitchen Scale – I love my kitchen scale and use it all the time.  Takes the guess work out of scaling the dough balls. 
  • Pizza Peel – Blackstone pizza peels or pizza shovels are thin, flat paddles that usually have a long handle. The tool slides the pizzas in and out of the pizza oven. You can also use this to move pizzas between surfaces and rotate them in the hot oven.
  • Pizza Rocker – This tool can help in cutting a pizza quickly. It resemblance a part of the wheel that has a very sharp curved edge with a handle on the top.  Two hands are required to use this cutting tool. 
  • Cutting Pizza Wheel – Pizza wheels are sometimes called pizza cutters or blades.  They are compact in size and consist of a handle with a rotating round blade on the front.  Use with one hand for quick pizza cutting.
  • Infrared food thermometer – This pizza oven has a temperature gauge on the top of the unit, but you might want on infrared food thermometer to double check the inside of the oven.  The stone gets hotter than the inside of the unit, so you can take a reading with the temperature gun.   

How to Make Homemade Pizza Dough

Gather all the ingredients to make the flatbread pizza dough recipe.  I suggest making this pizza dough in a KitchenAid Mixer, but you can make this by hand if desired. 

Combine the bread flour (aka all-purpose flour), sugar, salt, yogurt, milk, half of a scrambled egg, oil (you can use vegetable or olive oil), and yeast (active dry) in the mixing bowl on low.

Use a dough hook if you have one, otherwise, you can use a flat paddle.  Once these ingredients are mixed, add the water and combine about 2 minutes on the low setting to make a smooth dough.

With cooking spray, grease a large bowl.

Put the pizza dough into the bowl and tightly cover the bowl with plastic wrap.

Pizza Dough Proofing

Place the bowl in a warm place (I like to set it on the back side of my stove) and let the dough ferment/rise for about 2 hours.  

TIP: Cover the bowl and the back of the oven panel with a large towel and turn your oven on the warm setting.  This helps the dough rise properly and can help speed up the fermentation process. 

You want the dough to double in size.

How to Scale out the Blackstone Pizza Dough Recipe

After the dough has doubled in size, it’s time to scale or divide the pizza dough.  Poke the dough down with your fingers. 

You need to figure out if you want small individual serving size pizzas or larger (14-inch) pizzas.  A 4-ounce piece of dough will make about a 6 or 7-inch pizza.  

I suggest using a kitchen scale for this step.  Using the scale, divide the pizza dough into 4-ounce portions.  You should have about 10 pieces. 

Shape the pizza dough into smooth round balls by folding into the center creating a smooth outer dough and the rough center will be your bottom.  Next, place the dough balls onto a lightly floured surface making sure to spread out a bit.

With a pastry brush, lightly oil the top of each dough ball.  Cover with a clean towel/cloth and let rest for about 30 minutes.

With clean, floured hands, grab one of the pizza dough balls and shape the pizza crust.  Flatten the dough like a pancake by gently pressing and stretching it.

This can be done in your hands in the air or on a lightly sprinkled cornmeal work surface.  Pizza dough too sticky?  Make sure your hands and fingers are well floured.

If needed, sprinkle some flour on the top of the pizza dough as you are stretching it. 

TIP: You can use a little flour in the beginning stages of pressing out the pizza dough, but I suggest using cornmeal as a non-sticking agent in the final stages of shaping the dough. 

Flour will burn while cooking the pizza at high temperatures and create an unpleasant tasting crust.  I like to use cornmeal on the bottom of the crust and flour on the top of the crust. 

If using a 4-ounce dough ball, then you will shape the crust to about 6 or 7-inches round.  Leave the outer rim of the dough piece a little thicker than the center area.

How to Make a Pizza in the Blackstone Pizza Oven

Prepare all your favorite pizza toppings for pizzas.  You can do this step ahead of time and store in the fridge until ready to use. 

Preheat the Blackstone Pizza Oven on medium-to-medium high heat.  Do not rush this step.  It will take about 10 or 15 minutes to get the pizza oven up to the desired 550°F plus temperature. 

I suggest creating the pizza on a pizza peel.  Lightly sprinkle the pizza peel with some cornmeal.  Place the pre-shaped pizza dough crust onto the pizza peel. 

TIP: No need to pre-bake the crust!! 

Next, add a thin layer of the pizza sauce to the dough crust using a pizza ladle.  You can take the sauce all the way to the edge of the crust or leave about an inch to have a nice edge especially if you left the dough thicker on the outer edge.

Sprinkle a thin layer of shredded mozzarella cheese on top of the pizza sauce. 

Add your desired toppings and then another layer of shredded mozzarella cheese.  You can also use mozzarella cheese balls and slices instead of shredded cheese.

How to Cook a Pizza in the Blackstone Pizza Oven

Once the Blackstone Pizza Oven is at least 550°F, open the pizza oven door.  Make sure the oven has enough heat.

Using the pizza peel, slide to fully assembled pizza into the oven.  Go into the oven with a level pizza peel and place the front part of the peel on the back side of the pizza oven round bottom pizza stone.

Lift the handle of the pizza peel up and gently slide the pizza off the peel and onto the hot pizza stone.  You will want to make quick jerking motions with the pizza peel to help the pizza slide off. 

Once on the stone let the pizza cook to create a nice crispy bottom.  If desired, place the pizza oven door back to create a hot oven.

Every couple of minutes, check the desired doneness of the pizza.  Once you get a crispy bottom crust, use the pizza peel, and rotate the pizza a half of a turn. 

The pizza oven is hotter in the back so the pizza will get done more on the backside so make sure to cook evenly. 

TIP: Carefully watch the pizza as it is cooking so that you do not burn it!!  This pizza oven cooks your pizzas very fast!! 

I make small pizzas in about 4 minutes.  The average time is 6 minutes to make a pizza.  When the pizza has a crispy golden-brown crust and a browned cheesy top, remove the pizza from the oven.

Make sure the pizza is completely cooked. If it is not fully cooked, return back to the pizza oven and cook pizza longer. Place on a cutting board. 

TIP: Do not cut in a pizza pan. Use a cutting board and then slide onto a pizza pan to serve. Use a pizza rocker or pizza cutter to cut the pizza into serving size pieces. 

Serve the freshly cooked pizza hot with any desired sides.   

How to Store Homemade Pizza Dough

If you decide to make the pizza dough up ahead of time and want to store the dough to use later,  you can.  Just make the pizza dough up as normal, scale it, and then use plastic storage bags for each dough ball. 

Remove as much air as possible and close.  Leave room for expansion of the dough and store in the fridge for up to 3 days.  

You can also freeze the baggies of pizza dough in an airtight container. Pull the dough from the freezer several hours to thaw before using.

How to Store Leftover Pizzas

Completely cool the leftover pizza.  Store in an airtight container in the refrigerator for up to 6 days. 

Leftover pizza is the best!!  Eat the pizza cold right out of the refrigerator or heat up and have warm. 

To reheat the pizza, use an air fryer, the pizza oven, a regular oven, or in the microwave.

What is the temperature for cooking pizza in the Blackstone Pizza Oven?

The optimal temperature for making a pizza on the Blackstone Pizza Oven is between 550°F and 600°F on the temperature gauge on the front of the oven. 

Should I pre-cook the homemade pizza crust before making the pizza?

No, there is no need to pre-cook the homemade pizza dough crust before making the pizza in the Blackstone Pizza Oven.  Because of the high temperature of the oven and the two stone patented technology, the pizza is cooking from both the top and the bottom. 

What to make with pizza dough?

There are so many things that you can make with pizza dough!  Make elephant ears if you deep-fry thin patty pieces.  Fry stretched out pieces on a lightly greased griddle and make naan bread or fry bread.  Turn this fry bread into garlic bread or toss in cinnamon sugar and make cinnamon sugar dippers.  Bread sticks and cheesy bread sticks are also a good choice. 

My pizza dough is not rising, what happened?

If your dough is not rising then you have old yeast, the wrong kind of yeast, or the temperature is too cold around your pizza dough.  Yeast will expire so make sure to check the dates on the packaging.  There are several kinds of yeast so make sure you have active dry yeast.  Place the mixed dough into a warm place and cover it with a towel to help trap the heat in.  Just don’t cook the dough.  You are just warming it to get the yeast growing.

Ingredients

  • Flour, All Purpose 5 cups
  • Salt, Table 1 1/2 teaspoon
  • Sugar, Granulated 1 1/2 teaspoon
  • Egg, Scrambled 1/2 each
  • Milk - Room Temperature 1/4 cup
  • Yogurt, Plain - Room Temp. 1/4 cup
  • Oil, Vegetable 2 tablespoons
  • Yeast, Active Dry 3/4 teaspoon
  • Water, warm 1 1/2 cups
  • Extra Flour and Cornmeal for rolling out the pizza crust

Instructions

  1.     2. This was the first time I have used yogurt in pizza dough and I have to say it added such a great flavor. Subtle, but definitely there!
