What Does Walleye Taste Like?

Walleye is a freshwater fish that has a mild flavor along with a soft texture.  When cooked, you will get flaky white meat layers that are tender and fall apart.  

You will get no fishy taste with this freshwater fish when handled properly.  I like to make oven baked walleye as well as deep fried walleye for a dinner meal.

Walleye Sandwich Ingredients

  • Skinless Walleye Fillets
  • Fryin’ Magic Coating Mix or Drakes Mix or Shore Lunch Mix.
  • Salt, Black Pepper, or Lemon Pepper Seasoning
  • Frying Oil – Vegetable Oil, Peanut Oil, Cooking Oil
  • Bread Slices – Lightly Toasted
  • Tartar Sauce, Dijon Mustard, Mayo
  • Toppings: Shredded Lettuce, Sliced Tomato, Pickle Slices, Cheese Slices, Hot Sauce

How to Make an Easy Homemade Tartar Sauce

Homemade tartar sauce is super easy to make!  For my full recipe, check out easy tartar sauce.  To make your own tartar sauce, in a small mixing bowl combine mayo, relish, fresh dill, lemon juice, salt, and pepper. 

Mix until smooth.  Taste and adjust the seasonings if needed.  Make a tangy tartar sauce by using dill relish or make a sweet tartar sauce by adding sweet relish.

Is Walleye Good to Eat?

Yes, walleye is an excellent fish to eat.  It’s prized by anglers and food enthusiasts alike for its mild, delicate flavor and firm, flaky texture. 

Walleye’s clean taste makes it a versatile option for various cooking methods, including frying, grilling, baking, and pan searing.  When cooked properly, walleye can be a delicious and nutritious addition to your diet.

How to Make a Crispy Walleye Sandwich on Blackstone

Heat the Oil:  Place a pan (foil or metal) onto the Blackstone griddle and preheat on high heat.  Fill the pan with your favorite frying oil so the pan is no more than 2/3rds full.  Heat the oil until it reaches a temperature of 375°F.  The oil should sizzle when you add the breaded fish fillet.

Control the Oil Temperature:  I like to use a Taylor digital thermometer when trying to monitor the oil temperature.  The reason why I like it is because of the long temperature probe and I can set the 375°F temperature and an alarm will sound when it reaches that.  The fry oil needs to stay between 375°F and 350°F for proper deep frying.  You might need to adjust the heat of the griddle to help control the proper temperature. 

Season the Fish:  Season the fillets with a pinch of salt and pepper to taste. 

Coat the Seasoned Fish:  Place the dry fry mix into a storage bag.  Add a few pieces of seasoned fish fillets to the bag.  Fill the bag with a little bit of air and twist shut.  Shake the bag to coat the fillets. 

How to Fry the Walleye

Fried Walleye:  Carefully place the coated walleye filets into the hot oil.  Fry them for about 2-3 minutes per side, flipping halfway through frying with a metal slotted spoon, or until they are completely golden brown.  Cook until the fish flakes easily with a fork and will be white in color.  Avoid overcrowding the pan causing the oil temperature to drop.  Fry in batches if necessary. 

Remove from the Oil:  Use a slotted spoon to remove the fried walleye from the hot oil.  Place the fish that has been removed from the oil onto a paper towel lined plate. 

Assemble the Fish Sandwich

Toast the Bread:  While the walleye is frying, you can toast the bread slices to your desired level of crispiness. 

Stack the Fish Sandwich:  Once the walleye fillets are ready, assemble your sandwich by starting with the first slice of toasted bread.  Arrange a layer of the fried walleye and then your desired toppings.  Add a homemade tartar sauce or if you like a little heat, try this Sriracha mayo. Finish by adding the second piece of toasted bread. 

Serve and Enjoy:  Savor your homemade crispy walleye sandwich with your favorite side dish such as potato chips, fresh vegetables, or French fries.

Pan Fried Walleye

If you don’t have a Blackstone griddle, that’s okay.  You can pan fry the walleye with a pan on the stove or even deep fry in a fryer if you want. 

The techniques still apply.  Heat the oil to 375°F, season and coat the walleye pieces, drop prepared fish into the hot oil, and cook until the fish floats in the oil and is golden-brown in color. 

How to Store a Leftover Walleye Sandwich

Walleye sandwiches are best served when they are freshly made.  But, if you need to store leftover walleye sandwiches, remove the condiments. 

Place in an airtight container or a Ziplock baggy.  Store in the refrigerator for up to 3 days.

If you are like me, a fully loaded fish sandwich makes a filling meal.

Can I use frozen walleye fillets for the sandwich?

While fresh walleye is preferred, you can use frozen fillets that have been thawed and patted dry.  Ensure they are fully thawed before breading and cooking.

Are there alternatives to tartar sauce for the fish sandwich?

Absolutely!  You can customize your fish sandwich with various condiments like mayonnaise or an assortment of aioli’s with a unique flavor twist such as bacon aioli or pesto aioli. 

Do you take the skin off walleye before frying?

Yes, take the skin off walleye before frying!  Deep fried walleye is best served without the skin.

Crispy Walleye Sandwich

This Crispy Walleye Sandwich stands out as a true crowd pleaser with its golden-brown outer layer and tender flaky white meat.  A classic fish sandwich recipe that is highly sought out during the Lenten season.

Ingredients

  • Fresh Walleye 1 fillet
  • Fryin’ Magic Coating Mix 1/2 cup
  • Salt 1/2 teaspoon
  • Black Pepper 1/4 teaspoon
  • Bread, Slices 2 each
  • Tartar Sauce 1 tablespoon
  • Lettuce 1 piece
  • Frying Oil

Instructions

    How to Make a Crispy Walleye Sandwich

    1. Heat the Deep Frying Oil:  On the Blackstone Flat Top Griddle place a skillet or foil pan.  Add no more than 2/3 of the pan with your desired deep frying oil.  Turn the flat top griddle burners to high.  Using a digital thermometer with a probe to keep track of the oil temperature, heat the oil to 350°F to 375°F. 
    2. Prepare the Walleye:  Cut the skinless fish filet into small strip pieces.
    3. Season the Fish:  Season the fish pieces with a small amount of salt and black pepper. 
    4. Shake in Dry Fish Mixture:  In a storage bag, place the dry mix.  Close the bag allowing a little air to remain in the bag, shake and coat each walleye piece thoroughly and evenly.  Tap each fish piece to remove any extra dry fry mix. 
    5. Fry the Walleye Pieces:  Carefully place the prepared walleye fillets into the hot frying oil.  If making more several sandwiches, don't overcrowd the oil and fry in batches.  Fry the fish for about 2 - 3 minutes, using a slotted metal spoon to flip the fish pieces halfway through cooking until they turn golden brown and float in the hot oil.  Make sure to deep fry the walleye fish until it flakes easily with a fork and the fish pieces are white in color and not translucent in the center. 
    6. Drain on a Paper Towel Lined Plate:  Once the walleye fish is cooked to a golden-brown crispiness, transfer the fried fillets to a plate lined with paper towels to remove any excess grease. 

    Assemble the Walleye Sandwich

    1. Toast the Bread or Bun:  While the walleye is frying, you can toast the bread slices or bun to your desired level of crispiness. 
    2. Assemble the Fish Sandwich:  Once the walleye fillets are fully cooked, assemble your walleye sandwich by starting with the first slice of toasted bread or bun.  Arrange a single ayer of the fried walleye and then your desired toppings.  Finish by adding the second piece of toasted bread or bun. 
    3. Serve and Enjoy:  Savor your homemade crispy walleye sandwich recipe with your favorite side dish such as potato chips, coleslaw, or French fries.   

Notes

Using a Deep Fryer if you don't have a Blackstone Griddle:  Use a deep fryer appliance that has a temperature control gauge for cooking.  Fill the fryer with oil, set the desired temperature, and let it heat up until you get a green light.

  1. This was so delicious and quite easy to make. The star was the homemade tarter sauce (I usually buy it but tried your recipe and loved it!)

    I made these over the weekend and my 4 sons all declared them delicious too. They are all far taller than me now and they towered over while I cooked like little school boys waiting for a snack. Ha!!!
