Easy Homemade Noodles

Three simple ingredients are all it takes to make these delicious homemade noodles. The perfect addition to any homemade soup, cabbage and noodle or any other dish of your choice.

This step by step instruction will guide you on how to make these soft and simple egg noodles. After you realize how easy it is to make your own fresh pasta, you might never go back!

How to Make Noodles from Scratch

Gather all of the ingredients that you will need to make this homemade noodle recipe.

Start a large stockpot of water on the stove over medium heat.  

In a large bowl add the eggs and whip with a fork until eggs are combined.  Add the salt and water to the eggs and continue whipping.  

One half cup of flour at a time, add to the egg mixture and stir with the fork making sure to combine all of the flour.  I used 2 ½ cups of flour.

A dough ball will start to form.  When it starts to get hard to stir the dough it is time to move to the countertop.

On a clean, dry countertop add ½ cup flour and spread out just a little bit making sure there is no bare countertop showing because the wet dough will stick.  

Add all of the dough to the center of the floured countertop.  With your hand kneed the dough to slowly incorporate the flour. If you need to add more flour you can.

How Do I Know When the Homemade Noodle Dough Is Ready to Roll Out?

Test the dough by pinching it with your fingers.  If the dough sticks to your fingers you have to kneed more flour into the dough.  

If the dough does not stick to your fingers, then it is ready to roll out.  

Split the dough into for dough balls.  Roll out each ball, one at a time, on a floured countertop with a rolling pin.  

Remember that the dough will more than double when cooked in the boiling water.  I roll the dough so I can start to see the color of the countertop.

Cut the dough into pieces so that it will fit the pasta machine.

You can also use a pasta machine to roll out the dough and then use a different attachment to cut the pasta.  Cut noodles however you desire.  

I have hand cut noodles with a knife or cutting wheel like a pizza cutter.  When I first started making noodles, I had a handheld pasta cutter.  

Now, I have invested in an attachment for my kitchenaid mixer that is the best. See pictures of cutting the pasta.

Do Homemade Noodles Have to Dry?

You do not have to dry these noodles to use them.  I make, roll, cut and cook the noodles all together.  

If you want to make noodles up ahead of time you can with this recipe.  Just make, roll, cut and then dry the homemade egg noodles on a sheet pan or noodle rack until the dough is completely dry.  

Can Homemade Noodles Dry Overnight?

Depending on how thick you have made the noodle will depend on the drying time.  I would let them dry overnight, but you may have to let them dry a couple of day.  

Do not store them in a container until the noodles are completely dry.  Then store in an airtight container until you are ready to cook the noodles.  

Cooking Noodles

Salt the pot of boiling water.  Add the noodles a few at a time of one dough ball to the boiling water and then gently stir to prevent sticking.  

Boil for 10 minutes making sure to stir noodles every few minutes.

Scoop the noodles from the boiling water and place in a strainer.  Place the strainer in a bowl of cold water for 10 minutes.

Drain the noodles and place in a clean bowl.  In the meantime, cook the second batch of noodles like the first batch and then repeat with batch 3 and 4 until all of the noodles are cooked.

Can I Cook My Noodles in the Soup?

Yes, you can! You will need to make sure that you have extra liquid in the soup because the noodles will soak up the liquid.  The starch in the noodles will also thicken the liquid giving you a different flavor soup.

Ingredients

  • Eggs 3
  • Salt 1/2 tsp
  • Water, cold 6 1/2 Tbsp
  • Flour, all purpose 3 cups

  1. I do prefer making pasta and noodle dishes with fresh and homemade pasta! Thank you for the recipe, now I can try making it on my own! Reminds me of my mom’s homemade noodles!

  2. This is the way my grandma taught me to make noodles. (She would be 123 this year.) The only difference is that I use a half of an eggshell of water for each egg I use and not a certain number of tablespoons. I often make chicken noodle soup with them by boiling my chicken and using the broth as my stock. I then add peas, carrots, chives and parsley. It’s a hit with my large crew.
