My shrimp and chicken fried rice is an irresistible delicacy that can be cooked up in under 30 minutes.  A main meal dish that is loaded with chicken, shrimp, an assortment of vegetables and sautéed with perfectly cooked white rice. 

This fried rice recipe is better than take-out and will leave your family fighting over the leftovers.  With my Blackstone Griddle chicken and shrimp fried rice recipe, the prep work is super easy as well as the clean-up. 

Hibachi chicken and shrimp combined with fried rice is a restaurant quality recipe that you will want to make again and again!  This satisfying harmony of flavors, textures, and colors is not only easy to make but also a crowd-pleaser on any occasion.

Chicken and Shrimp Fried Rice Ingredients

Preparing all the fried rice ingredients ahead of time is a must for this shrimp and chicken fried rice recipe.  This recipe for hibachi fried rice cooks up very quickly and you will not have time to go running for missing ingredients. 

Bacon

Oil – Olive Oil, Vegetable Oil, Sesame Oil, Canola Oil, Avocado Oil

Chicken Breast Pieces

Raw Shrimp – Fresh Shrimp or Uncooked Frozen Shrimp

Fresh White Mushrooms

White Onion

Celery

Bell Pepper

Fully Cooked Long Grain White Rice

Soy Sauce

Does the White Rice Need to Be Cooked Before You Fry It?

Yes, when making griddle fried rice with chicken and shrimp, you will want to use cooked white rice for the recipe.  Do not overcook your rice because when you cook up the fried rice, it will become mushy.  

The rice should be al dente.  Long grain white rice is best. It is not recommended to use jasmine rice, risotto rice, or orzo.

How to Cook Rice for Shrimp and Chicken Fried Rice?

White rice (long grain) works best for griddle fried rice.  Cooking long grain white rice for a fried rice recipe is a crucial step to achieve the perfect texture and flavor. 

Many griddlers say that the white rice needs to be prepared ahead of time and to use only cold cooked rice.  After testing many batches of fried rice, I say that it is okay to use freshly cooked rice to make your griddle recipe.  

My fried rice with shrimp and chicken turns out perfect every time. What makes a difference is HOW the rice is cooked.

This process allows each grain to remain separate, creating a light and fluffy fried rice that’s perfect for absorbing all the delectable flavors of the dish.

Cook Perfect Rice for Hibachi Fried Rice

Start with using dry long grain white rice.  In a large stock pot, bring 10 cups or more of cold water to a boil over medium-to-medium high heat. 

Add table salt to the boiling water along with 1 1/3 cups of white enriched long grain rice.  1 1/3 cups of dry rice will make about 4 cups of cooked rice.  

Stir to combine the rice in the water.  Make sure to watch the boiling rice water so that it doesn’t boil over.  If needed, turn down the stove burner. 

Stir often to prevent the rice from sticking on the bottom and clumping together.  You want the rice to be al dente and not over cooked.  

Test for doneness by taking a sample of the cooked rice, let it cool, and then taste it.  If the rice is still crunchy, cook it longer. 

If the rice has no crunch in the center, it’s done.  The goal is to get the rice just cooked and not over cooked.  Rice cooking times will vary. 

Test the white rice for doneness after about 8-10 minutes of boiling.  Once the long grain white rice is fully cooked, use a small hole colander, and drain the water off the rice.  

Rinse the cooked rice with cold water and toss it around the colander to wash off all the starchiness of the rice.  This white rice recipe will not be considered “sticky white rice” which is not what I want!!  

You can use the cooked white rice right away or store in an airtight container in the refrigerator until ready to make the chicken and shrimp fried rice recipe. 

Fried Rice Mix-Ins

  • Canned or Frozen Peas, Sugar Snap Peas
  • Bean Sprouts
  • Minced Garlic (Fresh or Pre-packaged)
  • Green Beans
  • Fresh Ginger
  • Frozen Carrots
  • Pre-cut Diced Vegetables
  • Seasonings such as Red Pepper Flakes, Garlic Powder, Garlic Salt
  • Substitute tofu for the other proteins.

How To Make Chicken and Shrimp Fried Rice on Blackstone Griddle

Gather your fried rice ingredients to make on the griddle.  Make sure to pre-cut all your vegetables and cut the bacon and chicken breast in small pieces, removing any large pieces of fat. 

All the fresh vegetables need to be cut into small pieces, so they cook quickly.  Preheat your Blackstone Flat Top Griddle to medium heat for 5 minutes. 

Add the diced bacon to one side of the hot flat top griddle and cook until the bacon starts to get crispy.  On a different part of the preheated Blackstone griddle apply a thin layer of your favorite oil and spread around with the griddle spatula

Add all the prepared vegetables on a different part of the greased griddle.  Select another part of the greased griddle, add the chicken pieces and season with salt and pepper. 

Use a griddle spatula to flip the bacon, vegetables, and chicken every couple minutes.  Once the bacon is starting to crisp up and the vegetables are becoming tender, combine the two piles together and toss to mix. 

Remove any excess bacon grease to the grease trap.  On another part of the hot Blackstone griddle, add a thin layer of oil. 

Add the fresh shrimp pieces to the hot oiled griddle and season the raw shrimp with some salt and pepper.  Cook a couple minutes and use a pair of tongs or the griddle spatula to flip each shrimp piece over.

You want the cooked shrimp to be pink on both sides and you should not see any uncooked brown spots.  Raw shrimp cook very quickly so do not overcook them. 

How to Add an Egg to Griddle Fried Rice

While the bacon and vegetables are cooking on the griddle, create a hole in the center of the bacon and veggies with your griddle spatula to cook the egg.  Crack the egg in the hole and break the yolk. 

Let the fried egg cook a minute before you start to scramble it.  With the griddle spatula, just scramble the egg and try not to mix any of the bacon and vegetable pieces in. 

Scramble the egg until it is a soft scrambled egg.  Combine the cooked bacon, vegetables, and scrambled egg together.  

Add the chicken and shrimp, rice, salt, and pepper to the other ingredients and use the griddle spatula to combine all together.  Griddle sauté for a few minutes and continue to combine all the ingredients. 

Sprinkle about a tablespoon of soy sauce (low sodium soy sauce or regular) over top of the whole fried rice mixture.  Continue to sauté until desired fried rice doneness is achieved. 

Test the Blackstone Griddle shrimp and chicken fried rice for flavor.  If needed, add a dash of soy sauce, salt, and pepper.

Remove the fried rice with chicken and shrimp from the griddle to a serving dish. Garnish with diced green onions. Serve immediately while the dinner is still warm.

Other Fried Rice Cooking Methods

If you don’t have a flat top griddle, that’s okay! You can use a nonstick skillet pan on the stove or a wok. Make sure to use a large skillet and cook in stages if needed.

How to Store Fried Rice with Shrimp and Chicken

Shrimp and chicken fried rice is a recipe that you are going to want to have leftover’s.  Leftover bacon fried rice is super delicious and is better after the first day. 

Store cooled leftover hibachi fried rice in an airtight container in the refrigerator for up to 6 days.  Warm up in the microwave, in a pot on the stove, or on the flat top griddle. 

What to Serve with Griddle Chicken and Shrimp Fried Rice

This Chinese fried rice is a perfect meal all by itself but can be served with other main dish meals.  For the smoker, try smoked baby back ribs, smoked spatchcock chicken, smoking venison kabobs, and smoked chicken thighs.

Can I customize the vegetables in chicken and shrimp fried rice?

Most definitely!  Feel free to get creative with your vegetable choices.  You can add zucchini, broccoli, corn, water chestnuts, or even pineapple pieces to give your fried rice a unique twist.

Can I use brown rice instead of white rice?

Yes, while white rice is traditional for fried rice.  You can substitute it with brown rice for a healthier option.  Keep in mind that brown rice may take a little bit longer to cook. 

How do I prevent my fried rice from becoming mushy?

To avoid mushy fried rice, it’s essential to cook the rice properly.  The white rice should be al dente and not over cooked.  Using leftover rice that has been refrigerated, will also help to create the perfect recipe for hibachi fried rice.

Chicken and Shrimp Fried Rice on a Blackstone Griddle

Ingredients

  • Bacon, Slices, Small Diced 1/2 cup
  • Oil, cooking. 1 tablespoon
  • Chicken Breast, Pieces 1 cup
  • Shrimp. Raw, Fresh or Frozen 1 cup
  • Mushrooms, Fresh, White, Small Diced. 1 cup
  • Onion, Small Diced 1/2 cup
  • Celery, Small Diced 1/2 cup
  • Pepper, Bell, Small Diced 1/2 cup
  • Egg, Large 1 each
  • White Rice, Long Grain, Fully Cooked 4 cups
  • Soy Sauce 1 tablespoon
  • Salt 1/4 teaspoon
  • Pepper 1/8 teaspoon

Instructions

  1. Gather your ingredients to make the chicken and shrimp fried rice.
  2. Dice all your vegetables, chicken breast, and the bacon. All ingredients needs to be cut small, so they sauté quickly.
  3. Preheat your Blackstone Griddle to medium heat for about 5 minutes. Apply a thin layer of oil to season the griddle as it is warming up.
  4. When the griddle is hot, add the diced bacon pieces to the Blackstone griddle and cook until the bacon starts to crisp up. This process will take about 5 minutes.
  5. As the bacon cooks, add all the vegetables (onion, celery, peppers and mushrooms) on another part of the griddle. Add a squirt of oil to the vegetables. Using the griddle spatula, stir the cooking vegetables until they are tender crisp.
  6. Cook the chicken pieces in another part of the griddle. Season the chicken. Flip the chicken, half way through cooking.
  7. On a different part of the griddle, add the shrimp pieces and season to taste. Flip each piece of shrimp, half way through cooking. Continue griddle cooking until fully done but not over cooked.
  8. Stir the cooked vegetables and bacon together on the griddle.
  9. While the bacon and vegetables are cooking, make a hole in the middle to cook the scrambled egg. Crack the egg into the middle and then break the egg yolk. Use your griddle spatula to scramble the egg by itself until just done.
  10. On the Blackstone griddle combine the bacon, vegetables, scrambled egg, rice, salt and pepper. Cook for a few minutes and continue using the spatula to combine all the ingredients.
  11. Add the chicken and shrimp pieces to the rice mixture.
  12. Sprinkle about a tablespoon or two of soy sauce over top of the fried rice mixture. Let the fried rice cook and get crispy bits mixed into it.
  13. Test the Blackstone Griddle chicken and shrimp fried rice for flavor. Adjust the seasoning if needed by adding more soy sauce, salt and pepper.
  14. When desired fried rice with chicken and shrimp flavor is achieved, remove from the griddle to a serving dish. Garnish with diced green onions and serve hot.

Notes

  • Add or subtract your favorite vegetables to this shrimp and chicken fried rice dish.
  • Substitute diced steak or tofu.
  • If you don't have a Blackstone griddle, use a large sauté non-stick pan on the stove top instead.
  • Substitute other seasoning to taste until your desired flavor is achieved.
