What is Lion’s Mane Mushrooms?

This mushroom is a bright white, plump, dense fungi with the looks of a long flowing lion’s mane.  Growing in clumps, this Lion’s Mane mushroom does not have the typical traits of a mushroom such as a cap and a stalk.  

As this fresh mushroom ages, it turns from super white in color to shades of yellow and then finally brown when the mushroom is bad.  

Lions Mane Mushrooms typically grow in the outdoors, on dead or dying hardwood trees.  Foragers can find them in late summer through the early fall in North America and throughout Europe. 

Where Do I Find Lions Mane Mushroom?

You can forge for wild Lion’s Mane Mushrooms if you are with an experienced mushroom hunter.  Try your local farmers market and ask around for a local grower.  

After asking in my community, I was surprised at how many farmers were growing these mushrooms in my area.

Can You Grow Lion’s Mane Mushrooms?

If you are like me, start growing your own Lion’s Mane Mushrooms.  You can buy a mushroom grow kit HERE!!  

This kit has you growing your mushrooms indoor on hardwood sawdust bags under the right conditions within several weeks.  To try growing your own Lion’s Mane Mushrooms there is several choices, so make sure to do some research.  

I have had a lot of luck with a growing kit from the Michigan Mushroom Company, but I am learning about different varieties of Lion’s Mane.   Make sure to follow the manufactures growing instructions.  

If grown correctly, you should be able to get several harvestings from just one bag. I was able to get 5 harvests with a lot of nurturing.

How To Clean and Store the Lion’s Mane Mushrooms

When the mushrooms are harvested be careful with them because they will bruise easily.  They will last up to a week if properly stored.  

To store, place the Lions Mane mushrooms in a single layer in a paper bag.  Seal the bag and carefully put in the refrigerator until ready to use.  

To clean the mushrooms, use a dry paper towel or dry brush.  Brush or cut off any debris where you find it.  Do not soak or wash the mushrooms in water.    

What Does Lions Mane Taste Like?

People have asked me what Lions Mane Mushrooms taste like?  Others say that it tastes like lobster or has a seafood flavor.  

I personally say that fresh lions mane mushrooms taste delicious and take on the flavor of the dish. I love mushrooms and these are no exception!!

When I eat Lions Mane Mushrooms they have a hearty, spongy feeling with a mild flavor.  When cooked with other foods, they take on the great flavor of what it is cooked in.

How to Make Lion’s Mane Crab Cakes

Gather your ingredients to make the crab cakes.  The crab meat that I used was Bumble Bee white crab.

Add the crab meat, Panko breadcrumbs, shredded butternut squash, diced Lion’s Mane Mushroom, egg, salt, and pepper to a large bowl. Mix to combine by gently folding with a spoon or your hands.  

Set the bowl aside and preheat your Blackstone Griddle to medium heat.  Back to the crab cakes mixture to make the formed cakes.  

Split the mixture into 5 even balls.  Working with one ball at a time, place into the palm of your hand.  

Squeeze the crab cake mixture together to form a small patty.  This will take patience and a little practice.

Gently squeeze the mixture to bind together.  Place the delicate flat patties on a baking sheet lined with parchment paper.

Make your patties thin for a crispier crab cake or make the patties thicker for a softer center.  You want the patties to be about 2 inches wide.  

Place in the refrigerator until ready to cook.  This step can be done ahead of time and kept cold until ready to cook.  

How to Cook Lion’s Mane Mushroom Crab Cakes

On a preheated Blackstone griddle, place a thin layer of olive oil (or oil of your choice) and spread around with a griddle spatula.  Cook on medium high heat.  

Carefully place the mushroom crab cake patties onto the hot greased flat top griddle.  Allow to cook until golden brown (about 4 minutes) and flip with your griddle spatula.

If needed, add more oil.  Cook the second side until that side is golden brown.  Do not overcook your crab cakes!

Serve immediately while they are hot.  Pair your favorite dipping sauce such as tartar sauce and a sprinkle of minced parsley.

Quick Tartar Sauce Recipe

Combine your favorite mayonnaise, with pickled relish, a little lemon juice and your favorite seasonings.  Add fresh chopped parsley if desired. Stir all together and serve with your lions mane crab cakes.

How to Store Mushroom Crab Cakes

If you have leftover crab cakes store them in an airtight container in the fridge for up to 6 days.  Reheat in the microwave, air fryer, sauté pan on the stove, or on the flat top griddle.

  • Hot sauce
  • Garlic powder
  • Dijon mustard
  • Finely diced Parsley or Fresh Herbs
  • Soy sauce
  • Worcestershire sauce
  • Paprika
  • Flavored salt
  • Old bay seasoning
  • Hot sauce

Pan Fry Lions Mane Crab Cakes Recipe

If you don’t have a Blackstone Griddle, then you can easily pan fry these crab cakes.  Prepare the patties according to the directions.  

Cook patties in a large skillet over medium heat.  Heat oil of your choice in the pan and add butter for extra flavor.  

Then carefully set the patties into the pan.  Sauté until crispy golden brown and gently flip.  

Serve hot and with your favorite dipping sauce. Add a side of lemon wedges and a sprinkle of parsley.

Does Lions Mane Really Taste Like Crab?

Some say that Lions Mane Mushrooms taste like seafood but the mushrooms that I have grown have a mild earthy flavor and take on the flavor of the dish that you are cooking.  

What to Serve with Mushroom Crab Cakes?

Tartar sauce is a great choice to dip your crab cakes into.  To make an easy tartar sauce, mix mayo with some pickled relish, a dash of lemon juice and your favorite seasoning. Lion’s Mane Crab Cakes with shredded butternut squash are layered with awesome flavor and are very easy to make. This amazing recipe has a crispy golden-brown outside and a tender center. Serve with a dollop of tartar sauce to create a flavorful hors d'oeuvre.

Ingredients

  • Crab Meat, White 6 ounce
  • Butternut Squash, Shredded 1 cup
  • Breadcrumbs, Italian 3/4 cup
  • Lion's Mane Mushroom 1/2 cup
  • Egg 1 each
  • Salt 1/2 teaspoon
  • Pepper 1/4 teaspoon
  • Olive Oil 1 tablespoon

Instructions

  1. Shred the butternut squash with a box grater.
  2. Gather all your ingredients to make the mushroom crab cakes. The crabmeat that I used was Bumble Bee white crab.
  3. Add the crab meat, breadcrumbs, shredded butternut squash, Lions Mane Mushroom, egg, salt, and pepper to a large bowl. Combine by gently folding with a spoon or your hands.
  4. Set the bowl aside and preheat your Blackstone Flat Top Griddle to medium heat.
  5. Split the crab mixture into 5 even balls. Squeeze the crab cake ball mixture together to form a small patty. This will take patience and a little bit of practice. Gently squeeze the crab mixture to bind together. Place the flat patties on a baking sheet lined with parchment paper. You want the patties to be about 2 -3 inches wide. Place the patties in the refrigerator until ready to cook. This step can be done ahead of time and kept cold until ready to griddle grill.

Notes

Substitute another mushroom of your choice for the Lions Mane Mushroom.

If you don't have a griddle, use a saute pan on the stove-top.

Add-In one or more of the following for extra flavor: Hot sauce, Garlic powder, Dijon mustard, Finely diced Parsley or Fresh Herbs, Soy sauce, Worcestershire sauce, Paprika, Flavored salt, Old bay seasoning, or Hot sauce.
