How to Make Creamy Potato and Bacon Soup
Gather all of your ingredients to make this best potato soup. Cut the bacon into small pieces making sure to cut off any excess fat and discard.
Next, peel and cut the potatoes into medium dice sized pieces. Place the potatoes into a bowl of cold lightly salted water until you are ready to use them.
Just make sure to drain the water off before you use the potatoes in the soup. Peel and dice the onion.
Over medium heat in a large heavy stock pot sauté the bacon and onion (about 10 minutes) until the onions are translucent and the bacon is cooked but not crisp.
While the onions and bacon are cooking it’s time to make the roux. In a small pan over medium/low heat, melt the butter.
Then add the flour and whisk until smooth. Cook of a couple of minutes. Set aside until you are ready to use.
When ready add the potatoes to the bacon and onions. Sweat/cook the potatoes for 3 minutes making sure to stir a couple of times. Time to add the chicken stock and bring to a boil which takes about 15 minutes.
Add all of the roux to the potato mixture and simmer to thicken the soup. You might want to turn down the heat so that the soup is just simmering.
Check the potatoes often. You do not want the potatoes to get too done because they will just fall apart before the soup is finished.
When the potatoes are nearly tender add the heavy cream. Simmer 5 minutes and add the parsley.
Season with salt and pepper to taste. Gently stir to blend all of the flavors.
What Can I Add to Potato Soup for Flavor?
You can add fresh diced peppers, celery, or carrots to the bacon and onion when you are first starting to sauté the soup.
When you are finishing up the bacon and potato soup recipe another way to add flavor is trying some of your favorite spices or fresh herbs.
I use parsley and salt/pepper, but you could easily use thyme, Worcestershire sauce, garlic, dry mustard, allspice, cheese, celery seed, seasoning salt or pepper, dry white wine, or cayenne pepper.
How Do You Make Potato Soup Thicker?
Is your creamy bacon potato soup not thick enough for you?
No problem!! Make a little extra roux and add it to your soup. Mix well to incorporate the roux. This will help to thicken the liquid.
In a blender, take a couple cups of the chunky part of your potato soup and blend it until smooth. Return back into your soup and stir.

- Heavy Whipping Cream 2 cups
