A Mini Pizza on Blackstone Griddle is super easy with the help of Pillsbury mini pizza crusts.  Kid friendly, great tasting, and fun to make.  4 ingredients are all that you need to make this quick pizza recipe that can be made in under 10 minutes.

This mini pizza recipe is a crowd pleaser because who doesn’t like pizza, right?!?!  There is nothing like freshly made homemade mini pizzas for your next Super Bowl party or tailgating event.

Best Cheese for Pizza

A great quality shredded mozzarella is my cheese of choice.  Freshly shredding your mozzarella cheese is best but my mini pizzas turn out just fine with bag shredded cheese.  

But you can use any white cheese that you desire.  Some like to use mozzarella balls that they slice.  

Others use a blend of different cheeses such as an Italian 6 cheese blend which is mozzarella, provolone, asiago, parmesan, Romano, and fontina.  

The worst pizza that I had in my life was made with stinky cheese, so I do not recommend that.  It was made in Denmark when I was on vacation there and I am not sure what kind of cheese that they used.

How to Make Mini Pizzas

Prepare all ingredients to make your mini pizza on the Blackstone. If using vegetables, dice into small pieces.

Preheat the Blackstone Griddle burners to medium high heat.  Lightly oil the griddle surface.

I like using a pizza stone but is not necessary.  Place the stone onto the flat top griddle when you start preheating it.  The pizza stone should be heated nice and hot when you put the mini pizza dough crust on it.  

If desired, you can use a homemade pizza dough. Check out my naan bread recipe that I use for my homemade pizza crust. I like to keep it simple and use a prepackaged pizza crust.

Open your Pillsbury can and separate the pizza disks.  Use the tips of your fingers to push out the dough disks into a flat layer if you want a thin crust pizza. 

The perfect pizza crust depends on you and your tastes.  Carefully place the pizza dough circle onto the hot pizza stone or flat top griddle.  

You can use a lightly floured pizza peel or carefully place the dough with your hands making sure not to burn yourself.  The pizza crust will start to cook as you place the pizza toppings on so make sure to work quickly.

Apply a layer of your favorite pizza sauce to the top of the crust using a spoon by placing a dollop of sauce on the top center and swirl evenly around.  Add a thin layer of shredded cheese to the top of the sauce.  

Place your desired pizza toppings over the cheese making sure to sprinkle an even layer.  (See my list below for topping suggestions) Finish the mini pizza off by adding a generous layer of cheese over your toppings.

Cooking Pizza on Blackstone Griddle

Cooking pizza on a Blackstone Griddle is going to be different on every griddle.  The hot griddle cooking surface should be around 400°F.

When cooking your mini pizza, the time will vary.  The air flow around and under the griddle will affect your cooking time.  

Use a dome lid to help trap the heat around the mini pizzas to aid in the cheese melting and cooking the pizza snacks all the way through.  

The perfect homemade mini pizzas should develop a crispy golden-brown bottom crust, all the cheese should be melted, and the griddle pizza needs to be cooked all the way through the center.

Check the pizza dough by using your griddle spatula and lift to check how done the pizza crust is. If the pizza crust is done but the middle and top of the mini pizza is not.

Then place the pizza on a rack and make sure to use your dome lid. Once done, slide each pizza onto the pizza peel to lift and transfer to a serving dish.  Cut and serve the pizza hot.

How to Store Blackstone Mini Pizzas

Save any leftovers to reheat later. Completely cool your leftover Blackstone Griddle pizza recipe.  Place into an airtight storage container and place in the refrigerator for up to 6 days.

How to Reheat Blackstone Mini Pizzas

An air fryer is your best option for warming up your fully cooked mini pizzas.   Place in the basket, set the temperature to 400°F and the timer for 5 minutes.  Check after 3 minutes.  

Reheat your griddle pizza on a preheated Blackstone flat top griddle using a dome lid.  For a crisper crust, place the leftover pizza on a baking sheet and put into a preheated 425°F oven until the desired temperature is reached.  

Wanting a quick reheat option?  Place on a microwave safe plate and reheat for 30 to 60 seconds.

What Happened to the Blackstone Pizza Oven?

The Blackstone pizza oven had problems with the rotisserie failing because of extreme temperatures.  Blackstone Products still supplies replacement parts for the old pizza oven on their website blackstoneproducts.com.  A rumor has it that Blackstone Products will be coming out with a new and improved version of their pizza oven soon.  I can’t wait to get my own Blackstone pizza oven!!

Ingredients

  • Pillsbury Mini Pizza Crust 1 can
  • Pizza Sauce 1/2 cup
  • Shredded Cheese 1 cups
  • Toppings - Assortment

Instructions

    1. Gather all your ingredients to make your mini pizzas.
    2. Preheat the Blackstone Flat Top Griddle on medium high heat and place the pizza stone on to the flat top if using one.
    3. Open the pizza crust can and shape the pizza dough into your desired thickness.
    4. Once the pizza stone is hot, place the shaped crust onto the hot stone or directly on the griddle by using your pizza peel or carefully with your hand .
    5. Working quickly, spread a layer of pizza sauce onto the crust,
    6. Add a layer of shredded cheese.
    7. Sprinkle your desired toppings over the cheese.
    8. If desired, add another layer of shredded cheese.
    9. Cover all the mini pizzas with a dome lid.
    10. Let cook about 5 minutes. Lift the lid so that the heat stays trapped inside and place onto the griddle. Check for doneness of the pizza. Decide how much longer it needs to cook or if they are done.
    11. When the pizza is fully cooked, remove with the pizza peel or griddle spatula and place onto a serving tray. Serve hot.

      What Kind of Cheese Goes on Pizza?
      I prefer to use shredded mozzarella cheese. You can use any type of hard white cheese that you desire. Some people like to use slices of a fresh mozzarella balls. Many choose to use a blend of different cheeses such as an Italian 6 cheese blend which is provolone, mozzarella, asiago, parmesan, Romano, and fontina.
