Chicken and broth for your stew can be prepared in several different ways.  One way would be to buy a rotisserie chicken to use and then add boxed chicken broth.

Another way is to use leftover baked, broasted, or slow cooked shredded chicken with boxed chicken broth.  My preferred method is boiling your raw chicken pieces in seasoned water for at least one hour.

Use a large stock pot over medium heat with 10-12 cups water.  You can do legs, thighs, breasts or a whole chicken.

This step can be done a day or two in advance.  De-bone and skin all of your chicken pieces.

Set the chicken pieces aside.  If the broth is cold, skim any fat off the top.

When you are ready to make the easy chicken n dumplings, heat up the broth and then strain it to remove any of the chicken guck.  Combine the chicken pieces, broth, carrots and celery in the large stock pot over medium heat.

Cover and bring to a boil, cooking for 10 minutes.  In the meantime, prepare the dumplings.

How to Make Dumplings for Chicken and Dumplings

I like Bisquick to make my dumplings because my family likes their dumplings fluffy.  Mix the Bisquick and milk together with a spoon until soft dough forms.

After boiling the chicken mixture for 10 minutes as described above, reduce the heat to a simmer.  Drop one spoonful at a time onto the top of the chicken mixture.

Make sure the mixture is at a low simmer and keep uncovered for 10 minutes.  Then cover and cook an additional 10 minutes.  Uncover and scoop the dumplings off the top into a side bowl.

What Are Dumplings Made Of?

Chicken dumplings can be made several ways. Some people like flat and yummy strips of dough dumplings made with flour, baking powder, butter and milk.

I like fluffy drop dumplings.  Easy fluffy drop dumplings can be made with just Bisquick and milk.

The reason they are called drop dumplings is because you drop the dumpling dough into the hot liquid.  The hot liquid cooks the dumplings.

How Do You Thicken Chicken and Dumplings

After the dumplings are removed from the top of the stew, check to see if the liquid needs to be thickened.  I have not needed to thicken the chicken and dumplings because when the drop dumplings are cooking, the liquid will automatically thicken.

Stir the chicken mixture.  If you would like a thicker gravy, then combine the cornstarch with 1/2 cup cold water.

Slowly pour the cornstarch mixture into the boiling broth and stir gently. Serve the chicken stew with the drop dumplings.

Instant Pot Chicken and Dumplings

Combine the chicken pieces, broth, carrots and celery in the Instant Pot and press the sauté button. Cover and bring to a boil, cooking for 10 minutes.  In the meantime, prepare the dumplings.
