Any firm apple will work for this dried apple slices recipe. Use golden or red delicious, gala, or fuji apples.
How to Slice an Apple
How to slice an apple for drying is super important. Cutting your apple very thin is what you want when making this recipe.
To do this, use a mandolin, an electric slicer (which was what we used in culinary school, but the average person will not have one), use an apple peeler, corer, slicer for a KitchenAid Mixer, or a knife (as a last resort).
Slice your apple as thin as you can and get as many slices as needed. You can choose to peel your apple or leave the peeling on to add texture and color to your final dried apple.
How to Keep an Apple from Turning Brown
To keep an apple from turning brown, combine water and lemon juice in a bowl. I mix about 2 cups water with 1 tablespoon lemon juice.
When you slice your apple, soak it in the lemon water right away. I have added ¼ cup sugar to the lemon water to help offset the tartness of the lemon juice.
You can also add pineapple juice or orange juice as a substitute for the sugar if you like.
Dried Apples in the Oven
After the apples have been dipped in the lemon/sugar/water mixture to prevent browning, place the apple slices in a single layer on a Silpat lined baking sheet.
Turn the oven to the lowest setting. The lowest that my oven would go was 170° Fahrenheit.

Place the tray of apple slices in the preheated oven. Drying times will vary depending on your oven and the thickness of the apples.
Use the convection bake to help circulate the air around the tray. Crack the oven door to help release the moisture inside the oven.
Flip the apple slices every couple of hours to help in the drying process.

Drying times will vary depending on the thickness of the apple slices, the moisture content in the apples and the method that you use to dry the apples. Drying times can take up to 24 hours.

- Apple, Gala 1 each
- Lemon Juice 1 tablespoon
- Sugar, Granulated 1/4 cup
- Water 2 cups
Instructions
- Wash and slice your apple very thin.
- Combine the water, lemon juice, sugar, and water in a bowl.
- Soak the apple slices in the water solution for about 30 seconds.
- Place the soaked apple slices in a single layer on a Silpat lined baking sheet.
- Preheat the oven to 170° Fahrenheit or lower temperature.
- Put the sheet pan in the oven.
- Every 2 hours, flip the apple slices and continue cooking until apples are completely dry.
- Crack the oven door to help let out any moisture that the apples release.
- Store dried apples in an air tight container for up to 6 months.
