Should Cauliflower Be Rinsed Before Cooking?

Yes, it’s always a good idea to rinse cauliflower before cooking to remove any dirt or debris. After washing, pat the cauliflower dry with a paper towel to ensure it browns properly on the griddle. Excess moisture can prevent the cauliflower steaks from developing a good sear.

How to Make Cauliflower Steaks

Preheat the Griddle:  Gather your ingredients to make the cauliflower steaks. Preheat the Blackstone Griddle to medium-low heat for 5 minutes or set the electric Blackstone Griddle to 350°F. When the griddle is hot, add a little bit of olive oil (or your preferred grease) and spread it around with a griddle spatula.

How to Cut Cauliflower Steaks:  While the griddle is warming up, prepare the cauliflower.  Remove all the green leaves from the bottom.  Trim the stem so it sits flat.  Rinse the cauliflower head under cold water and pat dry.  Using a large sharp kitchen knife, carefully cut thick cauliflower steak slices.  Save any extra cauliflower pieces for soup, sautéing, or enjoying raw with dip.

Season the Cauliflower Steaks:  Generously season the cauliflower steaks with salt and pepper on both sides.

Griddle the Cauliflower Steaks:  Carefully place each steak onto the preheated griddle.  Add dollops of seasoned butter to the top of each steak.  For extra tenderness, add a little water to the griddle and cover with a dome lid.  Let the steaks cook for several minutes until they develop a golden brown crust.

Flip and Finish Cooking:  Use a griddle spatula to carefully flip each cauliflower steak.  Add more seasoned butter to the top and around the steaks.  If needed, add more water and cover again with the dome lid.  Cook until the cauliflower reaches your desired tenderness.

Serve and Enjoy:  Optional – Top with shredded parmesan cheese for extra flavor.  When fully cooked, remove from the griddle and transfer to a serving plate.  Serve hot and enjoy.
