Smoked Loaded Baked Potato

These potatoes are an easy side dish recipe that requires only a few ingredients.  Great for family get togethers because it can be prepped ahead of time, baked alongside of your smoked meats, and then finished off right before serving.

Russet Smoked Baked Potato

The best smoked baked potato is made with a large russet.  Russet potatoes produce a nice fluffy fully cooked spud. 

It is not recommended to use potatoes such as red potatoes, yellow potatoes, or Yukon gold potatoes, you will get a completely different tasting baked potato.  The russet potatoes starchy property and low moisture make these the perfect baking potato.  

Having more starch in the russet potato makes it softer & fluffier.  This creates the ideal qualities for absorbing sweet creamy butter, melted cheese, and crumbled bacon pieces.  

Just remember, when you choose the right potato, you will not be disappointed with the finished smoker baked potatoes cuisine.

Smoked Loaded Baked Potato Ingredients

Six ingredients are all that you need for this great side dish recipe.  No aluminum foil is needed because you want the potatoes to soak up the great smokey flavor.  This is all you need to make an easy side-dish smoked loaded potato recipe.

  • Russet Potatoes – Large
  • Olive Oil – Other Options are Seasoned Olive Oil, Softened Butter, or other types of oil.
  • Salt – Seasoned Salt is best.
  • Pepper – Seasoned Pepper adds great flavor!
  • Shredded Colby Jack Cheese
  • Bacon Bits or Cooked Bacon Pieces

How to Make Smoked Loaded Baked Potatoes

For a more in-depth recipe, check out my smoked baked potatoes recipe.  I make my potato recipe on a Traeger smoker grill, a Rec Teq pellet grill, or any type of smoker grill.

Gather all the ingredients to make the smoked loaded baked potatoes.  Preheat the smoker grill to 250°F. 

Clean each potato and poke holes into the skin of each one.  Rub the olive oil on the whole outside of each potato and season each potato with seasonings.  

Place the prepared potatoes on the grill grate of the preheated smoker.  Close the smoker lid and let the potatoes cook.

How to Cook Smoke Baked Potatoes?

Cooking time will vary for every smoker grill but should be between 2-3 hours.  The internal temperature of a fully cooked smoked baked potato is between 205°F – 210°F.  

When not using a temperature probe, one way to test smoked baked potatoes is to pierce them with a fork.  I know the smoked baked potato is done if they are fork tender.

Another way to test a smoked baked potato is to gently squeeze it.  You know the potato is done when it breaks apart. 

But if the smoked baked potato is still firm, then cook it longer.  When done, carefully remove from the grill with oven gloves or kitchen tongs.

Loaded Smoked Baked Potato Assembly

The smoked baked potato is very good with a pat of creamy butter.  But becomes even better if you top it with bacon and cheese! 

Once the smoked bake potato is removed from the smoker grill, cut a slit down the top, the long way.  Being careful not to cut all the way through the baked potato. 

Squeeze both ends of the baked potato to help open up the slit.  With a fork, fluff the inside of the potato.  Add a pat of butter to the potato. 

Top with a generous amount of shredded Colby Jack Cheese and a sprinkling of crumbled bacon pieces.  Place the prepared loaded baked potatoes on a baking sheet pan. 

Return back to the smoker grill and cook until the cheese is fully melted.  Remove from the grill and serve right away.  If desired, add a dollop of sour cream and a sprinkle of fresh chives.

How to Store Smoked Loaded Baked Potatoes

Store leftover cold smoked loaded baked potatoes in an airtight container for up to 6 days in the refrigerator.  Reheat loaded potatoes in the microwave for 30 second intervals until you reach the desired temperature. 

How to Make Leftover Smoked Twice Baked Potatoes

Turn left over smoked loaded baked potatoes into twice smoked potatoes by deconstructing them.  Remove the toppings and fully cut the potato in half the long way creating two pieces. 

With a spoon, remove the potato inside and place into a mixing bowl.  Set the potato skins aside.  Do this with all the leftover baked potatoes. 

Use a fork and break up all the potatoes.  Add some sour cream, butter, salt, pepper, shredded cheese, and cooked bacon crumbles. 

Stir to combine all the potato filling, add the filling back to the potato skin, and place back onto the smoker grill to heat up.  Cook until completely warmed up.  Top with more shredded cheese and melt.  When done, remove and serve right away. 

What to Serve with Smoked Loaded Baked Potatoes?

Smoked loaded baked potatoes are super delicious and makes a perfect side dish for your next cookout.  Other smoker side dish recipes: smoked sweet potatoes, smoked corn on the cob, smoked hasselback potatoes, smoked cheesy potatoes, and smoked asparagus.  

For smoked meat meal recipes: smoked spatchcock chicken, smoking venison kabobs, smoked turkey, chicken kabobs on the pellet smoker, smoked chicken thighs, smoked baby back ribs, and smoked pulled pork.

Yes, I can use an oven to finish off a smoked loaded baked potato.  This is especially helpful for people who plan on using the smoker to make more food and there is no room to finish them off.

The smoking time of a loaded smoked baked potato is about 2 – 3 hours at 250°F.  The cooking time required for the smoked bake potato will differ depending on the size of the potatoes and temperature fluctuation of the pellet grill.

Ingredients

  • Russet Potatoes, Large 4 each
  • Olive Oil 2 tablespoons
  • Salt 1/4 teaspoon
  • Pepper, Ground 1/4 teaspoon
  • Butter 4 tablespoons
  • Shredded Cheese, Colby Jack. 1 cup
  • Bacon, Crumbles 1/4 cup

Instructions

    How to Make Loaded Baked Potatoes on the Smoker

  1. Gather all the ingredients to make the smoked loaded baked potatoes. 
  2. Preheat the smoker grill of your choice to 250°F.
  3. With a brush, clean the outside of each russet potato underneath running cold water.  This will help to remove any dirt that might be on the outside of the potatoes. 
  4. With a knife, poke about holes into the skin of each potato. 
  5. With your fingertips, rub the oil on the outside of each potato. 
  6. Season the cleaned potato with your favorite seasonings or use salt and pepper.
  7. Place the prepared potatoes on the smoker grill grate.  Close the smoker lid and let the russet potatoes cook.

  1. I had never tried a smoked baked potato before and now I don’t know how I lived without them!
    They were tender and fluffy inside but crispy on the outside with a delicious smoke throughout.
    SOOOOO GOOD!
    Especially topped with cheese. I left out the bacon as my daughter doesn’t eat meat, but we added extra cheese and some green onions. YUMMY!
