What Is Delicata Squash?

Delicata squash is a small, oblong winter squash with pale yellow skin and green stripes. Unlike other squash varieties, the skin is tender and completely edible once roasted — no peeling required!

Its flavor is a cross between sweet potato and butternut squash, making it a fall favorite in my kitchen.

You’ll only need a handful of simple ingredients for this delicata squash recipe:

  • Delicata Squash
  • Oil (olive oil or avocado oil work great)
  • Seasoned Butter (I love using garlic herb butter)
  • Salt and Pepper, to taste

How to Prepare Delicata Squash

Wash and dry your delicata squash well. The skin is edible, so there’s no need to peel it!

Slice off both ends, then cut the squash in half lengthwise.

Scoop out the seeds using a spoon.

Slice into half-moon shapes about ½ inch thick so they cook evenly on the griddle.

How to Roast Delicata Squash on a Blackstone Griddle

Preheat your Blackstone Griddle: to medium/low heat (about 375°F).

Drizzle oil on the griddle surface and spread it evenly.

Place the squash slices in a single layer on the hot griddle.

Season with salt and pepper, then drizzle your seasoned butter over the top.

Roast until tender and golden brown: flipping halfway through. This usually takes about 10–12 minutes, depending on the thickness of your slices.

Test for doneness: It’s ready when it’s fork-tender and slightly golden brown around the edges. The natural sugars will caramelize beautifully as it cooks.

Serve hot: right off the griddle for the best flavor!

How to Store Leftover Roasted Delicata Squash

Store cooled squash in an airtight container in the fridge for up to 4 days. Reheat on your griddle, in an air fryer, or the microwave until warmed through.
