How to Make Chicken and Dumplings
Gather all of your ingredients to make your chicken n’ dumplings recipe.
Prepare the chicken and broth. This can be done several ways. You can buy a rotisserie chicken and add boxed chicken broth, use leftover baked or slow-cooked shredded chicken, or—my preferred method—boil raw chicken pieces in seasoned water for about one hour.
Boil the chicken. In a large stock pot over medium heat, add 10–12 cups of water and your chicken pieces (legs, thighs, breasts, or a whole chicken). Simmer until the chicken is fully cooked.
Cool and prepare the chicken. This step can be done a day or two in advance. De-bone and remove the skin from your chicken pieces. Set the meat aside. If the broth is cold, skim off any fat from the top.
Strain the broth. When ready to make your easy chicken n’ dumplings, heat up the broth and strain it to remove any residue or bits of chicken.
Combine the base ingredients. Add the chicken pieces, broth, carrots, and celery to your large stock pot. Cover and bring to a boil over medium heat. Cook for about 10 minutes while you prepare the dumplings.
How to Make Dumplings for Chicken and Dumplings
Mix the dumpling dough. I love using Bisquick because it makes light, fluffy dumplings every time. Combine Bisquick and milk in a bowl and stir with a spoon until a soft dough forms.
Drop the dumplings. After boiling the chicken mixture for 10 minutes, reduce the heat to a simmer. Drop spoonfuls of the dough onto the top of the simmering chicken mixture.
Cook the dumplings. Keep uncovered for 10 minutes, then cover and cook an additional 10 minutes. Uncover and gently scoop the dumplings off the top into a side bowl.
How Do You Thicken Chicken and Dumplings
After removing the dumplings, check the consistency of your stew. Most of the time, the broth will naturally thicken while the dumplings cook.
If you prefer a thicker gravy, combine 1 tablespoon of cornstarch with ½ cup of cold water. Slowly pour the cornstarch slurry into the boiling broth while stirring gently until the desired thickness is reached.
Serve the hearty chicken stew with your fluffy drop dumplings and enjoy!
What to Serve with Chicken and Dumplings

Absolutely! Rotisserie or leftover baked chicken works perfectly and saves time.
Make sure the mixture is simmering gently, not boiling rapidly, when adding dumplings. This helps them stay fluffy and intact.
