For years, I have made this chicken quesadilla recipe with a quesadilla maker. Now that we have our Blackstone Griddle, this cheesy chicken quesadilla can be made in just a few minutes.
Sauté the vegetables and the chicken at the same time. Then combine all of the ingredients and you have just made the filling for your quesadilla. Add the tortilla shells, some shredded cheese and your meal is complete.

The best thing about quesadillas is that everyone can have their own filling if they want. The possibilities are endless with what to put inside your quesadilla.
Possible cheesy chicken quesadilla ingredients might be:

What You Need to Make Chicken Quesadillas
Cheesy Chicken Quesadillas are made with a few simple ingredients of your choice.
All you need are tortilla shells, sliced white onion, sliced white mushrooms, diced peppers, diced chicken and shredded cheese of your choice as well as salt and pepper seasoning and some olive oil.
How to Make Chicken Quesadilla
Gather all of your ingredients to make your chicken quesadilla.
Heat the griddle on medium heat. After the griddle is warmed up place ½ tablespoon of the olive oil onto a section of the griddle. Place the vegetables on top of the hot oil.
On the other side of the griddle, add the other ½ tablespoon of olive oil. Top the oil with the diced chicken, season with the seasoned salt and pepper.
Cook the vegetables until they start to get tender and the chicken is done. Combine the veggies and cooked chicken on the griddle.
Place 3 of the tortilla shells on the griddle. Add 1/3rd of the vegetable/meat mixture onto the shell.
Top each quesadilla with 1/3rd of the shredded cheese and finally add the tortilla shell onto of the melting cheese. Flip the chicken quesadilla over to sauté the other side.
Substitute a Hard Shell for a Soft Shell
If you are wanting to switch it up a little bit then make this easy hard taco shells instead of a soft shells for the quesadilla. Make the quesadilla filling as described above and fill the hard taco shell along with your favorite toppings.
Make Ahead and Leftover Tips
Griddle cheesy chicken quesadillas are a great make ahead meal and warm up when ready to eat. Easy leftover tips for reheating: Microwave, Air Fryer, Oven, Sauté Pan with a lid or a Toaster Oven.
Reheating the Cheesy Chicken Quesadillas Recipe
Microwave for 30 second intervals until desired temperature is reached. Air Fryer – heat for 2–3-minute intervals until warmed up. Oven – Place on a baking sheet and bake at 350° for 4-5 minutes. Sauté Pan with a lid on the stove over medium heat for 2-3 minutes. Toaster Oven – heat for 2-3 minutes until desired temperature is reached.

- Mushrooms, White - Sliced 8 oz (225 g)
- Peppers, Small Diced 3/4 cup (3 oz) (80 g)
- Onion, White - Sliced 2 cups (5 oz) (140 g)
- Flour Tortillas, Soft Taco Shell - 8" 6 each
- Cheese, Shredded - Mexican Blend 2 cups (8 oz) (227 g)
- Salt, Seasoned - Lawry's 1/2 teaspoon (0.1 oz) (3 g)
- Pepper, Seasoned 1/4 teaspoon (0.05 oz) (1 g)
- Olive Oil 1 tablespoon (0.55 oz) (16 g)

Using gross olive oil on a flat top is a crime. Not only does it taste bad, it has a low smoke point.
Everyone has their own taste preference so don’t push yours off onto others. Smoke point doesn’t even factor into this recipe because I DON’T recommend cooking it at a high temperature!!
