These twice baked potatoes on smoker are made with smoked baked potatoes, butter, sour cream, shredded cheese, bacon pieces, and some seasoning.  These twice bake potatoes are a perfect part of a family dinner. 

By cooking these baked twice potatoes on a pellet grill will result in a crispy skin, creamy inside, and an amazing smoke flavor.

Smoked Twice Baked Potato Ingredients

Russet Potatoes – Large

Olive Oil – Other Options are Seasoned Olive Oil, Softened Butter, or avocado oil.

Salt – Seasoned Salt is best.

Pepper – Seasoned Pepper adds great flavor!

Softened Butter

Sour Cream

Shredded Cheese – Colby Jack or Cheddar Cheese

It All Starts With the Right Smoked Baked Potato

Use a firm large russet when making your smoked baked potato.  Using other potatoes such as red potatoes, yellow potatoes, or Yukon gold potatoes, will result in a different tasting baked potato.  

Baked potatoes on the smoker start with nice, firm russet potatoes.  The russet potatoes starchy property and low moisture make these the perfect baking potato.

When you choose the right potatoes, you will not be disappointed with the finished side dish recipe.

How to Make Baked Potatoes on a Smoker

Get my full step-by-step guide to making smoker baked potatoes.  Prepare the cleaned potatoes by rubbing oil or butter all over the potato skins. 

Season each potato with your favorite seasonings.  Place prepared potatoes on a preheated 250°F Rec Teq pellet smoker grill grates.  

Close the smoker lid and let the potatoes cook until they are fully done.  Smoker baked potato cooking times will vary but should be between 2-3 hours. 

Test for potato doneness by squeezing it or poking it with a fork to see if it’s tender.  When the smoked baked potatoes are fully cooked, remove from the smoker with a pair of tongs or oven gloves

Let the potatoes cool.  Move on to the next step to create your smoker twice baked potatoes. 

How to Make Smoked Twice Baked Potatoes

Gather all your twice baked potato ingredients.  Once the baked potatoes have cooled down, cut each one in half the long way. 

With a spoon, carefully scoop out the inside of the potato half and place it into a mixing bowl.  Leave a small layer of potato against the skins to help hold them together. 

Do this for all of the potato halves and line each potato skin up on a baking sheet pan facing up.  Once all of the potato insides have been removed, add the rest of the ingredients to the bowl. 

Add the sour cream, butter, shredded cheese, bacon bits, salt, and pepper to the bowl.  With a fork or spoon, mix all the twice baked potato ingredients together. 

Fill each potato skin with this potato mixture.  All of the potato mixture should be piled high onto the skins.  For a little extra touch, sprinkle some more of the shredded cheese on top of the uncooked twice baked potatoes. 

How to Cook Twice Smoked Baked Potatoes

Place the uncooked twice baked potatoes onto the preheated 350°F smoker grill.  My smoker of choice is a Rec Teq smoker grill!

Close the lid and let them cook until the cheese is melted and the center of each twice bake potato is hot in the middle. 

Cooking times will vary but will be about 20-30 minutes.  Once these cheesy potatoes are fully cooked and golden brown, remove from the smoker and serve immediately.

Smoker Twice Baked Potato Additional Mix-Ins

Smoked twice baked potatoes can be stuffed with an assortment of different ingredients if desired.  For a classic taste, keep it simple!  Some optional toppings might include:

  • Liquid Cheese
  • More Smoked Bacon Pieces as a garnish
  • Cream Cheese
  • A dollop of Sour Cream on top!
  • Garlic Butter
  • Salsa
  • Shredded Pulled Pork
  • Diced Green Onions or Fresh Chives
  • Seasonings – Onion Powder, Black Pepper, Garlic Powder, Kosher Salt

How to Store a Smoker Twice Baked Potato

Allow the potatoes to cool completely.  Store leftover smoked twice baked potatoes in an airtight container for up to 6 days in the refrigerator.  You can also wrap them tightly in plastic wrap to store in the refrigerator.

Twice Baked Potatoes Reheat

Leftover twice baked potatoes are just as good as the originals.  Reheat the smoked potatoes in the microwave using 30 second intervals until the desired internal temperature is reached. 

You can also reheat the potatoes in a 350°F oven, grill, or smoker grill until heated thoroughly. 

Frozen Twice Baked Potatoes

Twice baked potatoes freeze very well.  Place the potatoes in an airtight container and put in the freezer for up to 2 months. 

When ready to use, remove from the freezer and let thaw for several hours or reheat in the microwave using 30 second intervals until completely warmed all the way through.

Ingredients

  • Russet Potatoes, Large 4 each
  • Olive Oil 2 tablespoons
  • Salt 1 teaspoon
  • Pepper, Ground 1 teaspoon
  • Butter 4 tablespoons
  • Shredded Cheese, Colby Jack. 1 cup
  • Bacon, Crumbles 1/4 cup
  • Sour Cream 1/2 cup

    How to Make Baked Potatoes on the Smoker Grill

  1. Get my more in-depth step-by-step guide to making smoker baked potatoes.
  2. Gather all the ingredients to make the smoked twice baked potatoes. 
  3. Preheat the smoker grill to 250°F.
  4. With a kitchen scrub brush, clean the outside of each russet potato underneath running cold water.  This will remove any stubborn dirt that might be on the outside of the potatoes. 
  5. With a kitchen knife, poke holes into the skin of each potato. 
  6. Rub the oil (or butter) on the outside of each potato. 
  7. Season all the cleaned, oiled potatoes with your favorite seasonings such as salt and pepper.
  8. Place the prepared potatoes on the preheated smoker grill grate.  Close the smoker lid and let the fresh potatoes cook until they are fully done.
  9. Baked potato smoking times will vary but should be between 2-3 hours.  Test for baked potato doneness by squeezing it or poking it with a fork to see if it’s done.  
  10. When the smoker baked potatoes are fully cooked, remove with oven gloves. Let the baked potatoes cool completely.
