These Griddle Scrambled Pancakes are a fun and easy twist on traditional pancakes. Ingredients

  • Krusteaz Buttermilk Pancake Mix 1 cup
  • Water, Cold 2/3 cup
  • Butter 2 tablespoons

Instructions

    1. Prepare your pancake batter using your favorite recipe or a boxed mix according to the package instructions. I like to use Krusteaz Buttermilk Pancake Mix. Combine with cold water and whisk until smooth. Let sit 2 minutes before cooking.
    2. Start by preheating your Blackstone Griddle to medium heat. Add a generous amount of butter to the griddle and allow it to melt and coat the cooking surface.
    3. Pour the pancake batter directly onto the buttered griddle surface. Let it begin to set for a minute, flip pancake and then use a griddle spatula to chop and scramble the batter into small pieces as it cooks. Continue moving and chopping the batter so it cooks evenly.
    4. Keep cooking and stirring until the pancake pieces are fluffy, cooked through, and golden brown.
    5. At this point, you can leave them plain or add fun toppings right on the griddle. For best results, add the syrup of your choice overtop the scrambled pancakes while it's still on the griddle and toss to combine. This warms the syrup up as it bonds with the pancake.

Don't have a Blackstone Griddle? While the Blackstone Griddle makes it easier because of the large flat top cooking surface, a large skillet or flat pan will also work.
