How to Make Pumpkin Chocolate Chip Muffins

Ingredients and Oven: Gather all the ingredients needed to make your muffins.  Then, preheat your oven to 350°F.  Next, lightly grease or line your muffin tins with cupcake liners. 

Combine the Dry Ingredients: You can use a stand mixer, hand mixer, or just mix by hand.  In a medium sized bowl, whisk together the all-purpose flour, baking soda, salt, and ground pumpkin pie spice.  Set the mixed dry ingredients aside until ready to use.

Start Mixing:  In a large mixing bowl, combine the canned pumpkin puree, granulated sugar, vegetable oil, and eggs.  Beat until smooth and mixed together. 

Add Dry Ingredients:  Add the prepared dry ingredients to the pumpkin mixture.  Mix until just combined, making sure not to overmix. 

Fill Muffin Cups and Bake:  Fill the paper liners (or tin cups) about two-thirds full of the pumpkin muffin batter by using a portion scooper.  Next, sprinkle about 10 pieces of the chocolate chips on top of each prepare pumpkin muffin.  Poke a few of them down into the batter.  Place the muffin trays into the preheated oven and bake for 15-18 minutes.

Check for Doneness:  Check to see if the muffin is done by inserting a wooden toothpick into the center of the cupcake.  If it comes out clean, the muffin is done.  But if there is still a doughy batter on the toothpick, bake a little bit longer.  Remove the trays from the oven and let the muffins cool completely before removing from the tins.

Tips for Making the Best Pumpkin Muffins

Don’t Overmix: – Overmixing the batter can result in dense, tough muffins.

Bring to Room Temperature:  For best results, bring the eggs to room temperature so they will mix more easily with the other ingredients.

Measure All Ingredients Properly:  Too much flour can make the muffins dry.  Spoon the flour into your measuring cup and level it off with a knife for accuracy.  Do this same process with the granulated sugar.  Do this with all the ingredients. 

Check for Doneness:  Every oven is different, so start checking your muffins a few minutes before the recommended baking time.  They are done when a wooden toothpick inserted into the center comes out clean or with a few crumbs.

Absolutely!  Substitute the all-purpose flour with a gluten-free flour that can be used as a 1:1 replacement.

How should I store these muffins?

Store the muffins in an airtight container at room temperature for up to 3 days.  For longer storage, keep them in the refrigerator for up to a week or freeze them for up to 3 months.

  • Canned Pumpkin Puree 15 ounces
  • Granulated Sugar 2 cups
  • Vegetable Oil 1 cup
  • Eggs 4 each
  • All-Purpose Flour 2 cups
  • Baking Soda 2 teaspoons
  • Pumpkin Pie Spice or Ground Cinnamon 1 teaspoon
  • Salt 1/2 teaspoon
  • Chocolate Chips 2 cups
