How to Make Breakfast Tacos

Heat Griddle: Preheat your Blackstone Griddle to medium heat.  If using an electric Blackstone Griddle, set the temperature to 350°F. 

Start Cooking: Once the griddle is hot, lightly grease the surface with cooking spray or your favorite oil.  Dice the bacon into small pieces and cook until crispy on the griddle. When the bacon is almost done, start cooking the eggs. 

Scramble the Eggs: Crack the eggs onto the hot greased griddle and season with salt and pepper.  Use your griddle spatula to scramble the eggs until they are soft set. 

Make the Breakfast Taco: Place the soft flour tortilla on the griddle.  Add the scrambled eggs to one half of the tortilla.  Sprinkle the cooked bacon pieces and shredded cheese over the scrambled eggs.  If desired, add any additional toppings of your choice, such as diced tomatoes, avocado slices, salsa, and sour cream. 

Fold Taco: Carefully fold the tortilla shell over the filling to form a taco.  Cook for another minute or until the cheese is melted and the taco is heated through.  Serve hot with your favorite sides.

Ingredients

  • Soft Flour Tortilla 1 each
  • Eggs 2 each
  • Bacon 2 pieces
  • Shredded Cheese 1/2 cup
  • Cooking Spray
  • Salt & Pepper

Instructions

      1. Preheat your Blackstone Griddle to medium heat (about 350°F if using an electric model). Once hot, lightly grease the surface with cooking spray or your favorite oil.
      2. Dice the raw bacon into small pieces and cook on the griddle until crispy. When the bacon is almost done, crack the eggs directly onto the greased griddle surface. Season with salt and pepper, then use your spatula to gently scramble until soft and fluffy.
      3. Place a flour tortilla on the griddle. Spoon the scrambled eggs onto one half of the tortilla, then top with crispy bacon and shredded cheese. Fold the tortilla in half to form a taco and cook for another minute, flipping once, until the cheese melts and the shell is golden.
      4. Serve hot with your favorite breakfast sides and enjoy!

  2. These are my son’s favorite breakfast. I skipped the bacon (we are vegetarian) and made the rest just as you mentioned and it was delicious and filling.
