What is a griddle cake?

Griddle cakes are a cake that is baked on a griddle flat top.  It is also known as a pancake that is cooked on a griddle.  This recipe is not pancakes, it is an actual baked cake!!

Can you bake on a Blackstone Griddle?

Yes, you can bake on a Blackstone Griddle! With its even heat distribution and versatile cooking surface, the griddle can be used to bake a variety of foods like cookies, cakes, biscuits, and even bread.

Using a dome lid or griddle-safe baking accessories helps to create an oven-like environment, trapping heat and ensuring your baked goods cook evenly. This adds a whole new dimension to griddle cooking, allowing you to enjoy freshly baked treats right from your Blackstone Griddle!

Others have asked, “Why would you want to bake a cake on a griddle?” When you are camping and don’t have an oven, but want to celebrate a special occasion then baking on the griddle might be your only option.

Helpful Tips to Make a Cake on a Griddle

  • Griddle temperature – LOW – When baking on the griddle, make sure dial is set to the lowest temperature possible.
  • Wind guards are not needed when baking.  The wind guards trap the heat making the flat top hotter.  So whenever you are baking take the wind guards off.  
  • Every griddle will bake differently so baking times are just estimates.  Watch the baking cake closely until you get used to making baked goods on your griddle.  
  • Are your cakes burning on the bottom? Make sure the temperature is as low as it will go. Take 2 strips of foil and crumple them into a long log shape.  Then set the 2 pieces into an X shape on the griddle.  Place the cake pan on top of the foil so that the cake is level.  Bake as you normally would.  
  • To test for cake doneness, use a toothpick.  When you feel the cake is done, insert a toothpick into the cake.  If the cake is done, the toothpick will come out clean.  If the cake is not done, the toothpick will have some wetness from the batter and should be cooked longer. 

How to Make a Griddle Cake

Simple Ingredients and Preparation: This recipe is super simple because you will use a cake mix. TIP: Use your favorite cake recipe if you feel adventurous, but remember that baking times will vary. Gather all the ingredients and turn the griddle to the lowest setting to preheat the flat-top.

Mixing the Cake Batter: Combine the eggs, oil, cake mix, and water in a mixing bowl, following the directions on the box. Using a KitchenAid mixer works best. Mix for 2 minutes to smooth out the lumps in the batter. Use my pan grease recipe to coat the inside of your 4-inch round pans. With a #20 scoop, measure 3 level scoops per pan.

Adjusting for Larger Cakes: Do you want a larger cake? Use an 8 or 9-inch round pan and use 6 level scoops per pan or half of the cake batter. Adjust the cooking time accordingly.

How to Bake on a Blackstone Griddle

Bake the Cakes: With the griddle preheated on low, place the pan onto the griddle and use a basting cover to completely cover each cake pan. This creates an oven-like environment by trapping the heat under the lid to bake the cake.

Baking Times Will Vary: After about 10 minutes, gently lift the lid partway to check how the cake is baking. Keep the heat trapped into the dome lid. If it looks done, use a toothpick to check for doneness. If not, bake for a few minutes longer.

Preventing a Burnt Cake Bottom: If your cake is burning on the bottom or darker than you want, take two pieces of foil and crumple each into a long log. Place the foil pieces into an X on the griddle and set the pan on top. Make sure your cake pan is level, and bake as normal.

Frosting and Decoration: Chef Sherry’s buttercream frosting is easy and perfect for decorating your griddle cake. If the top of the cake has a hump, use a knife or a cake leveler to cut it even. Place the leveled cake onto a plate or cardboard base board.

Finishing Touches: Make the frosting ahead of time and store it in an airtight container. For a professional look, use a #2D Wilton star tip and a piping bag to apply the frosting to the cake. Finish with your favorite sprinkles for an extra special touch.

How is it possible to bake on a griddle?

By placing a cover or dome over your pan the heat is trapped like an oven to help bake the batter. Make sure to have the burners as low as they will go so that you do not burn whatever you are baking.

Why is my cake burning on the bottom?

Ingredients

  • Yellow Cake Mix 15.25 oz
  • Vegetable Oil 1/3 cup
  • Eggs, Large 3 each
  • Water 1 cup

Instructions

  1. Gather all the ingredients.
  2. Turn the griddle on to the lowest setting, to pre-heat the flat-top.
  3. Combine the eggs, oil, cake mix and the water in a mixing bowl making sure to follow the directions on the box. Using a KitchenAid mixer works best.

  10. After the cakes are cooled, cut each top to make sure each is level.
