What You Need to Make Turkey Pesto Gravy
Oven Roasted Pesto Turkey drippings.
To make turkey pesto gravy, strain the drippings from your cooked turkey that was prepared with a pesto spread. Discard any chunks or unwanted turkey remnants. Get my turkey recipe HERE.
If you don’t have an oven roasted pesto turkey, that’s okay! Any turkey drippings will do!
Turkey drippings, water, and cornstarch are all that you need to make this gluten free turkey gravy.
How to Make Gluten Free Turkey Gravy with Drippings
After you strain the turkey drippings, pour into a saucepan. Test the liquid for flavor.
Now is the time to adjust how the gravy will taste. If the liquid needs more flavor, add seasonings of your choice such as salt or pepper.
If the drippings have too much flavor, add some water or even some leftover boiled potato water. Test the drippings until you have reached the desired taste.
Bring to a boil over medium heat on the stove.
How to Thicken Gravy
While this turkey drippings gravy recipe is coming to a boil on the stove, make the “slurry” to thicken the turkey gravy. To make the slurry, combine the cold water and cornstarch.
I like to use a bottle with a pour lid such as this Rubbermaid Pint Bottle. Add the water to the container and then top with the cornstarch.
Close the lid to the bottle and shake to combine. When the turkey liquid has come to a boil, make sure to shake the bottle again and then slowly pour the “slurry” into the boiling liquid.
Use a whisk to combine the turkey drippings with the cornstarch mixture.
Chef Sherry’s Gluten Free Turkey Gravy Tips!
- #1 tip: Keep the liquid at a low boil the whole time you are making your gravy.
- #2 tip: Use cold water when making your “slurry”.
- #3 tip: Pour the “slurry” into the boiling liquid slowly. I add spirts of slurry to reach the desired gravy thickness.
- #4 tip: If gravy is too thin, make and add more slurry. If the gravy is too thick, add a splash of water while the gravy is boiling.
- #5 tip: When you have reached the desired consistency for your gravy, let it boil on low for 2 minutes. This helps cook the mixture all together to help with separation later.
- #6 tip: Serve the gravy while it is hot!
- #7 tip: Save any extra pesto turkey drippings for later use. Strain any unused drippings into small quart freezable containers. Store in the refrigerator overnight. Scoop off all the fat that has settled on the top of the liquid. Label and date the containers. Freeze for up to 6 months. When ready to make gravy, remove from the freezer, thaw, and make this homemade turkey gravy recipe.
Gluten Free Turkey Gravy – FAQ
If you want creamy gravy, then you need to add heavy cream. To make a creamy turkey gravy then make the slurry with ½ water and ½ heavy cream along with the cornstarch. Make the gravy as normal.
You can serve my oven roasted turkey with fresh herbs, mashed butternut squash, mashed potatoes, green beans, cranberry stuffing, homemade dinner rolls and don’t forget the apple cider slush cocktail with spiced rum!!
This turkey gravy recipe does not contain gluten because I use cornstarch to thicken the liquid. However, if you make a “slurry” with water and all-purpose flour, then your gravy will contain gluten.

Gluten Free Turkey Gravy (Pesto)

Ingredients
- Turkey Drippings 4 cups
- Water 1 cup
- Cornstarch 1/2 cup
Instructions
- Strain the turkey drippings.
- Place the drippings in a saucepan.
- Adjust the flavor of the drippings if needed.
- Over medium heat on a stove, bring the turkey drippings to a boil.
- Make a cornstarch slurry by mixing the water and the cornstarch together in a Rubbermaid Pint Bottle.
- Slowly pour the cornstarch slurry into the boiling turkey drippings.
- With a whisk, stir the gluten free turkey gravy.
- Continue a low boil with the gravy for 2 minutes.
- Serve hot.
