How to Make Christmas Scomuffie Cookies
Homemade Buttermilk – If Needed: Make homemade buttermilk by adding 2 tablespoons lemon juice or white vinegar to a one cup measuring container and then fill with milk. Let the homemade buttermilk sit for at least 5 minutes. The homemade buttermilk will become chunky and curdled which is what you want.
Gather the Scomuffie Ingredients: Gather all the ingredients needed to make the Christmas cookies. Measure the correct amount of each ingredient and set aside. With a kitchen knife, cut the cold butter into small chunks and place back into the refrigerator to keep cold.
Prepare the Scomuffie Dough: In a KitchenAid mixer fitted with a flat paddle, combine the premeasured dry ingredients which are the flour, granulated sugar, salt, baking powder, and baking soda. Add the cold, diced butter to the dry ingredients and mix on low speed until you achieve a grainy texture. Beat about 3 to 5 minutes. Whip the egg in a bowl together with the buttermilk and vanilla. Portion Christmas Scomuffie Cookies: Using a #40 portion cookie scooper, measure out a level portion of the homemade dough and dip the dough ball into the Christmas nonpareils. Place the dipped cookie dough balls on a parchment lined baking sheet pan.

Bake Scomuffie Cookies: Bake the Christmas cookies in a 325°F oven for 10-15 minutes. Check for doneness by inserting a wooden toothpick into the middle of the scomuffie cookie.
