Cheesy Bacon and Asparagus Soup

Cheesy Asparagus Soup Recipe

I seek out the best farmers markets or local farm stands for the freshest quality asparagus that I can get. If possible, I pick through the stalks to get the thin one verses the large ones. The thin ones have a tendency to be more tender than the larger stalks.

What Can I Do with Lots of Asparagus?

I enjoy the tender first picking of this green asparagus the most.  If you have an abundance of asparagus, there are plenty of delicious ways to use it!

You can roast or grill asparagus with a drizzle of olive oil and a sprinkle of salt for a simple side dish, blend it into a creamy soup, toss it into a stir-fry, or incorporate it into pasta dishes, frittatas, and salads for a burst of fresh flavor and nutrition.

How Do You Make Asparagus Soup from Scratch?

Gather all of your ingredients to make the soup recipe.  

Cheesy Bacon and Asparagus Soup Ingredients

I prefer to trim a little bit of the excess fat off of the bacon.  Cut the bacon into small pieces.  

Rinse your asparagus with fresh water and cut off the tough section of the bottom.  With a mandolin, slice the asparagus long ways making sure to use the guide to protect your hands.  

Shaved Asparagus

Another way to shred the asparagus is by using a hand peeler.  You can also choose not to slice the asparagus.  Instead cut it up into one-inch pieces.  

How to Cook Asparagus Soup

In a medium stock pot over medium heat add the diced bacon and cook for 7 minutes or until the bacon is slightly crispy.  Stir occasionally making sure not to burn the bottom of the pan. You want crispy bacon bits but not burnt bacon.  

Toss in the shredded asparagus and sauté with the bacon making sure to combine all together.  Cook for 4 minutes.  

Add the chicken broth and the seasoning to the pan with the asparagus and bacon.  Stir the soup to combine and cook for an additional 10 minutes.  

In the meantime, make the roux to help thicken the soup.  Use a small saucepan, melt the butter.  With a whisk, combine the flour with the melted butter.  Cook for 3 minutes while stirring the mixture to prevent burning.  

Combine the roux with the asparagus mixture and stir to incorporate.  Turn the burner to low so the asparagus soup with bacon is just simmering.

The Velveeta cheese is the next thing to add to the bacon asparagus soup.  Once the cheese is all melted the last step is to add the milk.  Taste the creamy bacon asparagus soup and adjust the seasonings if needed.  

Instant Pot Recipe for Cheesy Bacon and Shaved Asparagus Soup

In an Instant Pot, press the sauté button and add the diced bacon.  Stir and cook until bacon is starting to get crispy.  

Toss in the shredded asparagus and combine.  Cook in the Instant Pot for 4 minutes.  Add the chicken broth and the seasonings.  Stir to combine.  Cook for 10 minutes.  

In the meantime, make the roux to help thicken the soup.  Use a small saucepan, melt the butter.  With a whisk, combine the flour with the melted butter.  Cook for 3 minutes while stirring the mixture to prevent burning.

You can eat it, but I would not recommend eating the woody ends of asparagus. They are stringy in texture and lack the great asparagus flavor.

Ingredients

  • Bacon, diced small 6 ounces
  • Asparagus, shaved 1 pound
  • Chicken Broth 32 ounces
  • Lawry's Seasoning Salt 1/2 teaspoon
  • Morton's Seasonings 1/4 teaspoon
  • Butter 6 tablespoons
  • Flour, All Purpose 6 tablespoons
  • Velveeta Cheese 8 ounces
  • Milk 2 cups

Instructions

  1. This was really good! I was skeptical as I’ve only made asparagus soup where you blend to make smooth. I’ve made it twice, first time as written and 2nd time I added diced white onion and diced carrots when I added in the asparagus, we enjoyed it both ways. Thanks a a fun and yummy spin on asparagus soup!

  2. This is delicious the whole family loves it and we have it so often I want to try a twist! How do you think smoked Gouda would be with it?

    • I am not sure how Gouda cheese would taste in this soup. I have not used Gouda cheese in any of my soups before. If you try it, let me know how it tastes.
