Best Types of Chocolate for Chocolate Covered Strawberries

The type of chocolate you use can make all the difference in flavor and texture when making chocolate-covered strawberries. No matter which type you choose, always use high-quality chocolate for the best taste and mouth feel! Here are some options to consider:

  • Milk Chocolate – Sweet, creamy, and smooth, milk chocolate is a popular choice for chocolate-dipped strawberries. The majority of the time, this is the type of chocolate that I use for dipping.  It pairs perfectly with the natural tartness of fresh strawberries.
  • Dark Chocolate – Rich and slightly bitter, dark chocolate is a great option for those who prefer a less sweet treat. opt for at least 60% cocoa for a deep, intense chocolate flavor.
  • White Chocolate – While technically not “chocolate” since it doesn’t contain cocoa solids, white chocolate provides a sweet and buttery taste that complements strawberries beautifully.  White chocolate is also great for using as a drizzle overtop the dipped strawberries. 
  • Semi-Sweet Chocolate – A balanced option between milk and dark chocolate, semi-sweet chocolate offers a smooth, deep cocoa flavor without being overly bitter.
  • Chocolate Wafers or Melting Discs – These are specially formulated for melting and dipping, ensuring a smooth and glossy finish. They don’t require tempering, making them a great choice for beginners.

How to Make Chocolate Covered Strawberries

Making chocolate dipped strawberries on the Blackstone Griddle is simple and fun! Start by selecting fresh, ripe strawberries with vibrant green leaves. 

Let the strawberries come to room temperature.  Wash them thoroughly and let them dry completely.  Any moisture on the strawberries will prevent the chocolate from adhering properly.

How to Melt Chocolate

Using your Blackstone Griddle, turn it to a low setting.  The Electric Blackstone Griddle should be set at 200°F. 

Place a wet dish towel on the griddle surface to act as a buffer and prevent overheating. Then, place a small wide-mouth glass jar filled with milk chocolate wafers directly on the wet towel. 

Stir the chocolate occasionally with a spoon until it melts into a smooth, creamy consistency.  Make sure to stir the melting chocolate often to prevent burning. 

Chocolate Melting Tip:  Add a teaspoon of paramount crystals, vegetable shorting, or vegetable oil to help the chocolate melt better and provide a softer coating to the strawberry.  Find out more about paramount crystals and how to buy a pack. 

How to Dip Strawberries in Chocolate

Once the chocolate is fully melted, hold each strawberry by the stem and dip it into the chocolate, swirling to ensure an even coating. 

Gently scrape the bottom side of the chocolate dipped strawberry against the top of the glass jar before placing the strawberries on a sheet of foil to set. Repeat this process until all the strawberries have been dipped into the melted chocolate.

For extra flair, drizzle some of the extra melted chocolate (use white or colored chocolate to add a little color) over the top and decorate the strawberries with sprinkles, colored sugar, or sugar flakes.

Use different sized paper liner to keep each strawberry separate and prevent them from sticking together.  Place them in decorative tins, foil pans, or on a sturdy plate to create an attractive presentation. 

Wrap them up with clear cellophane bags and tie with a ribbon for a polished, festive touch.  Add a personalized tag or card to make your gift even more special!

How to Store Chocolate Covered Strawberries

Chocolate covered strawberries are best enjoyed the same day they are made.  But, I like to make extras to store for later. Place in a single layer in an airtight container and keep them in the refrigerator for up to 2 days

Avoid stacking them to prevent sticking, smudging, or cracking of the chocolate.  You can also freeze the chocolate dipped strawberries. 

Chocolate covered strawberries frozen are becoming a popular trend.  Just place the airtight container in the freezer for up to one month

When ready to eat, remove the desired number of strawberries from the freezer, and eat right away.  Do not let the frozen chocolate covered strawberries thaw. 

How Long Will Chocolate Dipped Strawberries Last?

If properly stored in a cool, dry place, chocolate covered strawberries can last up to two days.  However, for the best flavor and texture, it’s recommended to enjoy them within 24 hours of dipping. 

The strawberries may start to release moisture after a day, affecting the chocolate coating.

Other Ways to Melt Chocolate

If you don’t have an Electric Blackstone Griddle, there are several other ways to melt chocolate for dipping strawberries:

  • Microwave Method – Place chocolate wafers or chopped chocolate in a microwave-safe bowl. Heat in 15- to 30-second intervals, stirring between each, until smooth.
  • Double Boiler Method – Fill a saucepan with a couple of inches of water and bring to a gentle simmer. Place a heatproof bowl over the saucepan (without touching the water) and stir the chocolate until melted.
  • Any Type of Hot Plate – Use the wet hand towel trick on top of a hot plate. Set to a low setting.  Use a heatproof bowl to melt the chocolate in, making sure to stir frequently.   

Each method works well, but using an Electric Blackstone Griddle allows for better temperature control and an even melt!

  • Strawberries, Fresh 16 ounces
  • Milk Chocolate 12 ounces

    How to Make Chocolate Dipped Strawberries

Prepare the Strawberries

Start by washing the strawberries under cool running water. Pat them dry with a paper towel and let them air dry completely. Any moisture on the strawberries can prevent the chocolate from sticking properly. Fold the green stem back away from each of the strawberries.

Set Up the Electric Blackstone Griddle

Turn on the Electric Blackstone Griddle to the lowest heat setting. This will create gentle heat for melting the chocolate without burning it.

Melt the Chocolate

Place a small, wide-mouth glass jar or heatproof bowl on top of the griddle. Add chocolate wafers to the jar. To prevent direct heat from scorching the
chocolate, place a damp dish towel between the griddle surface and the jar. Stir the chocolate occasionally as it melts, ensuring a smooth consistency. This process should take about 5–7 minutes but varies and should not be rushed.

Dip the Strawberries in Chocolate

Hold each strawberry by the stem and dip it into the melted chocolate, twirling slightly to ensure an even coating. Let excess chocolate drip off and scrape off
excess from the bottom before placing the dipped strawberries onto a sheet of foil. If desired, drizzle with melted chocolate or sprinkle with toppings before the chocolate sets.  Let the chocolate completely set before packaging. 

Package the Chocolates

Use different colors and sizes of paper liners to keep each strawberry separate and prevent them from sticking together.  Place them in decorative tins, shaped foil pans, or on a sturdy plate to create an attractive presentation.  Wrap them up with clear cellophane bags and tie with a decretive twist tie for a polished look.  Add a bow and a personalized note or card to make your gift even more special!
